Today I’m sharing one of my all-time favorite comfort meals – Green Chicken Enchiladas! They’re cheesy, creamy, a little bit spicy (but I’ll show you how to make it mild too), and packed with flavor. Whether it’s a cozy family dinner or you’re just craving something delicious, this recipe is a winner!
Method
Make the Chicken Seasoning
To start, gather your spices: garlic salt, onion powder, ground cumin, chili powder, black pepper, and salt. Combine them in a small bowl and mix well until everything is evenly blended. This flavorful mix will be used to season your chicken, giving it that delicious base layer of taste that brings the whole dish together.
Cook the Chicken
Next, take your chicken breasts and spray both sides lightly with cooking oil. Then, sprinkle your spice mix evenly over both sides of the chicken, making sure it’s fully coated. Place the seasoned chicken on a baking sheet or oven-safe dish and bake at 375°F (190°C) for about 25 to 30 minutes, depending on the thickness of the chicken. It’s important to make sure the internal temperature reaches 165°F (74°C) – this ensures the chicken is fully cooked and juicy. Once it’s done, take it out of the oven and let it cool for a few minutes before handling.
Mix the Filling
When the chicken has cooled slightly, transfer it to a large mixing bowl and use two forks (or your hands) to shred it into small pieces. Then add 1 cup of Monterey Jack cheese, 1 cup of pepper jack cheese, the softened cream cheese, and the can of diced green chiles. Stir everything together until it becomes a creamy, cheesy, and well-mixed filling. This is the heart of your enchiladas, and it should smell absolutely amazing!
Roll the Enchiladas
Now it’s time to prepare the tortillas. Corn tortillas can be a little stiff, so warm them in the microwave for about 30 seconds, just enough to make them soft and easy to roll without cracking. Lay a tortilla flat, scoop in about one-eighth of the chicken mixture, and roll it up tightly. Place it seam-side down into a greased 9×13 baking dish. Repeat with the remaining tortillas and filling until all 8 enchiladas are rolled and arranged neatly in the dish.
Make the Sauce
To prepare the creamy salsa verde sauce, add the green chile salsa, water, sour cream, and chicken bouillon powder to a blender. Blend on high until the mixture is smooth and creamy. Then pour the sauce into a skillet or saucepan and heat it over medium heat for 3 to 4 minutes, stirring constantly. This step helps the flavors come together and warms the sauce before it’s poured over the enchiladas.
Assemble
Once the sauce is heated, pour it evenly over the enchiladas in the baking dish. Use a spoon or spatula to spread it out if needed, making sure all the enchiladas are covered. Sprinkle the remaining ½ cup of Monterey Jack cheese and ½ cup of pepper jack cheese over the top. This will melt beautifully in the oven and give you that cheesy finish everyone loves.
Bake
Place the baking dish into a preheated oven at 350°F (175°C) and bake the enchiladas uncovered for 25 minutes. When they’re done, the cheese will be melted and bubbly, and the edges of the tortillas may be slightly golden. Carefully remove the dish from the oven and sprinkle fresh chopped cilantro over the top for a bright, fresh finish.

Notes
- Warm your tortillas! If you don’t, they’ll crack when rolling.
- Shred the chicken when warm, not hot. Too hot and it’s hard to handle, too cold and it’s tough to shred.
- Don’t skip blending the sauce. It makes everything creamy and smooth!
- Check chicken temp! Always make sure it hits 165°F inside. That means it’s fully cooked and juicy.
