Gingersnap Cookies Crispy, Chewy, and Full of Spice!

There’s just something cozy about the smell of cinnamon, ginger, and molasses baking in the oven. If you’re looking for the perfect gingersnap cookies that’s crispy on the edges and chewy in the middle, you’ve got to try these classic gingersnap cookies! They’re sweet, spiced, and super easy to make even if you’re not a pro baker (yet)!

Method

Mix it up

To begin, make sure your butter is softened to room temperature this is important for getting that creamy texture. In a large mixing bowl, combine the softened butter and packed brown sugar. Use a hand mixer or stand mixer on medium speed to beat them together until the mixture looks smooth and fluffy. This step helps incorporate air into the dough and gives your cookies a tender texture. Once the butter and sugar are well combined, pour in the molasses and vanilla extract. Continue mixing until everything is fully blended and the mixture is dark and glossy. The molasses gives the cookies their classic deep flavor and chewy bite.

Spice it right

Now it’s time to add all those cozy spices! Sprinkle in the ground cinnamon, ground ginger, and baking soda. Stir gently to distribute them throughout the mixture before adding the flour. Slowly add the flour a little at a time while mixing on low speed (or stir with a spatula if you’re mixing by hand). This helps the flour blend in evenly without overworking the dough. The dough should come together into a thick, slightly sticky mixture easy to scoop and roll, but not too soft or runny.

Roll and sugar coat

Next, grab a small bowl and pour in your granulated or cane sugar. This will be used to coat the outside of your cookies for that beautiful crackled look and extra sweet crunch. Using a spoon or small cookie scoop, take about 1-inch sized portions of dough and roll them between your palms to form smooth, round balls. One by one, roll each ball in the sugar bowl, making sure every side is fully coated. This step not only makes the cookies sparkle but also gives them a little extra crisp on the outside once baked.

Bake away

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking. Place your sugar-coated dough balls onto the sheet, leaving about 2 inches of space between each one. These cookies will spread a little as they bake. Pop the tray into the oven and bake for around 12 minutes. Keep an eye on them they’ll puff up, develop little cracks on top, and the edges will just start to firm up. The center might still look a bit soft, but that’s okay! That’s how you get that chewy center once they cool.

Cool and enjoy

After baking, remove the tray from the oven and let the cookies sit for about a minute on the baking sheet. They’ll continue to cook slightly from the residual heat. Then, carefully transfer them to a cooling rack using a spatula. Let them cool completely so they can firm up to the perfect texture crispy on the outside, soft and chewy in the middle. Once cool, your gingersnap cookies are ready to enjoy!

Ingredients

  • Here’s what you need to whip up a batch of these spicy-sweet treats:

  • 1/2 cup (1 stick) butter, softened to room temp

  • 3/4 cup packed brown sugar

  • 1/3 cup unsulphured molasses

  • 1 1/2 tsp vanilla extract

  • 1 3/4 cups all-purpose flour

  • 2 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp baking soda

  • 1/3 cup granulated or cane sugar (for rolling)

Directions

  • Let’s bake some cookie magic!
    Mix it up!
In a big bowl, beat your softened butter and brown sugar with a mixer until smooth and creamy. Add in the molasses and vanilla, and mix again.
  • Spice it right!
Add the cinnamon, ginger, and baking soda. Stir them in. Now add your flour little by little and mix until everything’s evenly combined.
  • Roll and sugar coat!
Pour your granulated sugar into a small bowl. Use a spoon to scoop out dough balls (about 1 inch wide), roll them in your hands, then roll them around in the sugar until they’re all coated.
  • Bake away!
Put the dough balls onto a baking sheet lined with parchment paper. Leave a little space between them. Bake at 350°F for about 12 minutes until they puff and crackle.
  • Cool and enjoy!
Let the cookies sit on the pan for a minute, then move them to a wire rack to cool. (This is when they firm up and get the perfect chew!)

Notes

  • Just a few things to keep in mind while baking:
Don’t melt the butter, it should be soft but not runny, or your cookies might spread too much.
  • Measure flour correctly, scoop it into the measuring cup and level it off. Too much flour = dry cookies!
  • Don’t overbake, they’ll look puffy and soft at first, but they firm up as they cool. Trust the timer!
  • Chill the dough (optional) if your kitchen is warm or your dough feels sticky, pop it in the fridge for 10–15 minutes.

Serving Suggestions

These cookies are awesome on their own, but here are some fun ways to enjoy them:

  • Dunk them in milk or hot cocoa
  • Crumble over vanilla ice cream
  • Sandwich two cookies with whipped cream or cream cheese frosting
  • Wrap them up for a sweet homemade gift

Fun Fact

Did you know gingersnap cookies have been around for centuries? People in Europe have been baking spiced cookies like these since the Middle Ages! The molasses and spices helped preserve them for longer trips. How cool is that?

Conclusion

And there you have delicious, spicy-sweet gingersnap cookies that are sure to be a hit with anyone who takes a bite. Whether you’re baking for a holiday, a rainy afternoon, or just because you want something yummy, this recipe is always a winner. Try it out, and let me know how your cookies turned out!
