Creamy Egg Salad Recipe (With a Crunchy Twist!)

If you’re looking for a light, protein-packed meal that’s super tasty and easy to make, then this egg salad recipe is just for you! It’s creamy, a little crunchy, and full of flavor perfect for sandwiches, lettuce wraps, or even on its own. I love making this when I want something quick and healthy. Let’s get into it!

Method

Boil the Eggs

To start, place your eggs in a medium-sized pot and fill it with enough water to cover the eggs completely. Set the pot on the stove and turn the heat to high. Once the water reaches a rolling boil, reduce the heat slightly and set a timer for 10 minutes. This is the perfect amount of time to fully cook the eggs without overdoing it. Boiling the eggs too long can cause the yolks to develop a greenish-gray ring and a slightly sulfurous taste, which we definitely don’t want for our creamy egg salad.

Cool Down

As the eggs are boiling, prepare an ice bath by filling a medium bowl with cold water and plenty of ice. The moment the timer goes off, carefully transfer the eggs from the boiling water into the ice bath using a spoon or tongs. Let them sit in the ice water for about 5 minutes. This step is super important it helps stop the cooking process and makes peeling the eggs much easier by loosening the membrane under the shell.

Chop Everything

Once the eggs have cooled, gently tap them on the counter to crack the shell and peel them completely. Rinse off any small bits of shell under cold water if needed. Then, chop the eggs into small, bite-sized pieces and add them to a mixing bowl. Next, take your washed vegetables celery, red bell pepper, and red onion and dice them finely so they blend well into the salad and give that nice crunch. If you’re using capers, measure out a tablespoon, or chop a small pickle if you prefer that as your tangy element.

Mix It All Up

Now it’s time to bring everything together! In the mixing bowl with the chopped eggs, add your prepped veggies along with 1 tablespoon of light mayonnaise, 2 tablespoons of Greek yogurt, and your seasonings: dried dill, salt, and black pepper. If you’re using fresh dill, make sure to chop it finely and adjust the amount to your taste. Stir everything together gently with a spoon or fork until it’s fully combined and has a creamy texture with little bits of colorful crunch throughout.

Stir and Serve

Once your egg salad is mixed to perfection, give it a quick taste. You can add a pinch more salt, pepper, or dill if needed. When you’re happy with the flavor, it’s time to serve! Scoop a generous portion onto toasted low-carb bread, stuff it into crisp lettuce leaves, or even enjoy it straight from the bowl. However you serve it, you’re in for a satisfying and flavorful meal!

Ingredients

  • 3 hard-boiled eggs

  • 1 celery stick, finely chopped

  • ¼ red bell pepper, finely chopped

  • 2 tablespoons red onion, finely chopped

  • 1 tablespoon capers (or one small pickle, chopped)

  • 1 tablespoon light mayonnaise

  • 2 tablespoons Greek yogurt

  • ½ teaspoon dried dill (or 1–2 teaspoons fresh dill)

  • ¼ teaspoon salt (add more if needed)

  • ⅛ teaspoon black pepper (add more if you like a little kick)

  • Optional

  • Sliced low-carb bread or lettuce leaves for serving

Directions

  • Boil the Eggs:
Place the eggs in a pot, cover with water, and bring to a boil. Once boiling, set a timer for 10 minutes.
  • Cool Down:
When the timer’s up, place the eggs in an ice bath (just a bowl with ice and water) for about 5 minutes. This makes them easier to peel and cools them down fast.
  • Chop Everything:
Peel the eggs and chop them into small pieces. Chop the celery, red bell pepper, red onion, and capers or pickle.
  • Mix It All Up:
In a mixing bowl, add the chopped eggs and veggies. Then spoon in the mayo, Greek yogurt, dill, salt, and black pepper.
  • Stir and Serve:
Mix everything together gently until creamy and well combined. Spoon it onto toasted low-carb bread or lettuce leaves. Yum!

Notes

  • Don’t Overboil the Eggs: 10 minutes is just right. Any longer and the yolks can get a greenish ring and taste chalky.
  • Cool Eggs Quickly: The ice bath helps stop the cooking and makes peeling easier.
  • Chop Veggies Small: Smaller pieces mix better and keep the texture balanced.
  • Taste Before Serving: Always give it a taste to see if it needs more salt, pepper, or dill.

Serving Suggestions

  • On Toast: Classic and delicious on a slice of warm, low-carb bread.
  • In a Wrap: Try it in a lettuce or low-carb tortilla wrap.
  • Snack Style: Use cucumber rounds or bell pepper slices to scoop it up!
  • With Crackers: Great for a light snack or party tray.

Fun Fact

Did you know that the first written recipe for an egg salad showed up in a cookbook over 100 years ago? It’s been a go-to lunch idea for generations and for good reason! It’s affordable, quick, and super tasty.

Conclusion

This egg salad recipe is a total winner creamy, crunchy, tangy, and so easy to make. It’s perfect for meal prep, lunchboxes, or when you’re just craving something cozy and homemade. Try it out, and let me know how you like to serve yours!
