Creamy Pesto Gnocchi with Chicken Sausage (Easy 30-Minute Dinner)

There’s just creamy pesto gnocchi, something so cozy and comforting about creamy, cheesy pasta dishes especially when they’re quick, simple, and full of flavor. This Creamy Pesto Gnocchi is one of my favorite easy dinners to whip up. It’s packed with juicy chicken sausage, tender gnocchi, spinach, and a dreamy pesto sauce that makes it taste like you spent hours in the kitchen (spoiler: you didn’t!).

Whether you’re cooking for your family or just want a cozy dinner for yourself, this dish will hit the spot. Let’s get cooking!

Method

Start the Sauce

Begin by heating a large skillet over medium heat. Pour in 1–2 tablespoons of olive oil, then add the minced garlic. Sauté the garlic for about 30 seconds until it becomes fragrant be careful not to let it brown. Next, stir in the pesto and chicken broth, mixing until everything is well combined. The mixture should look glossy and smell incredible. This forms the flavorful base of your creamy sauce.

Make It Creamy

Once the pesto and broth are well blended, it’s time to add the Greek yogurt. Lower the heat slightly to prevent it from boiling boiling can cause the yogurt to curdle, and we want a smooth, creamy sauce. Add the yogurt and stir gently but continuously, allowing it to fully incorporate. You’ll see the sauce transform into a creamy, velvety texture. If you want to add seasonings like salt, pepper, garlic salt, or Italian herbs, now is a good time to sprinkle them in. Taste and adjust according to your preferences.

Add the Sausage

Take your chicken sausage links and slice them into bite-sized rounds. Add them to the creamy sauce in the skillet. Let the sausage simmer gently in the sauce for about 5–7 minutes. Stir occasionally so the pieces are evenly coated and warmed through. If your sausage isn’t pre-cooked, make sure it cooks completely at this stage it should be browned and heated all the way through.

Veggie Time

Next, add the diced tomatoes and fresh spinach directly into the skillet. Stir everything together and let it simmer until the spinach wilts down, which usually takes just a couple of minutes. The tomatoes add brightness, and the spinach gives the dish a lovely pop of color and extra nutrition. Once the vegetables are tender, sprinkle in the grated parmesan cheese. Stir again until the cheese melts and blends into the sauce, making it extra rich and delicious.

Cook the Gnocchi

While your sauce is doing its thing, bring a separate saucepan of water to a boil. Add the potato gnocchi and cook according to the package instructions. Most store-bought gnocchi only need 2–3 minutes to cook they’ll float to the top when they’re done. As soon as they do, drain them in a strainer to remove any excess water.

Mix It All Together

Now that the gnocchi are cooked, transfer them straight into your skillet with the creamy pesto sauce. Gently fold everything together so that the gnocchi are completely coated in that rich, flavorful sauce. Take your time mixing make sure every little dumpling gets its fair share of pesto goodness.

Serve & Enjoy

Once everything is mixed and heated through, your dish is ready to serve! Spoon it into bowls or onto plates, and if you’re like me, don’t forget to sprinkle a little extra parmesan on top for good measure. Serve warm and enjoy every cozy, creamy bite!

Ingredients

  • ngredients

  • 1–2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1/3 cup pesto (store-bought or homemade)

  • 1/4 cup chicken broth

  • 1/2 cup Greek yogurt (plain, not flavored!)

  • Salt, pepper, garlic salt, Italian seasoning (use what you like!)

  • 1 package of chicken sausage (4–5 links), sliced

  • 1 lb potato gnocchi

  • 1/2 cup diced tomatoes

  • 1 cup spinach (fresh is best!)

  • 1/2 cup grated parmesan cheese

  • Extra parmesan for topping (optional, but yummy)

Directions

  • Start the Sauce: In a large skillet, add olive oil, minced garlic, pesto, and chicken broth over medium heat. Stir it all together until it smells amazing and looks nice and blended.
  • Make It Creamy: Add the Greek yogurt to your skillet. Stir gently until the sauce becomes smooth and creamy. Don’t rush slow and steady wins the race!
  • Add the Sausage: Slice the chicken sausage and toss it into the sauce. Let it simmer (that means bubble gently!) for a few minutes until the sausage is fully cooked and warmed through. Stir now and then so nothing sticks.
  • Veggie Time: Add the diced tomatoes and spinach into the skillet. Keep stirring until the spinach gets soft and wilted. Then, sprinkle in the parmesan cheese and mix it all up.
  • Cook the Gnocchi: While the sauce is simmering, cook the gnocchi in a separate pot according to the directions on the package. Usually, they only take 2–3 minutes!
  • Mix It All Together: Once the gnocchi is cooked, drain it using a strainer and pour it right into your sauce. Mix until everything is coated with that creamy pesto goodness.
  • Serve & Enjoy: Top with more parmesan if you like (and who doesn’t?). Then serve it up while it’s warm and delicious!

Notes

  • Don’t let the yogurt boil! Boiling can make it curdle. Keep the heat medium or low when adding it.
  • Stir often to make sure nothing sticks to the bottom of the pan.
  • Cook the gnocchi separately if you toss it into the sauce raw, it won’t cook properly.
  • Use pre-cooked chicken sausage, or make sure your sausage is fully cooked before adding it to the sauce.

Serving Suggestions

  • Serve with a side salad or some garlic bread for a full meal.
  • Want more veggies? Add mushrooms, peas, or roasted zucchini.
  • No chicken sausage? Try grilled chicken or go meatless with chickpeas!

Fun Fact

Did you know that gnocchi (say it like “NYO-kee”) is an Italian pasta made from potatoes? It’s soft, fluffy, and kind of like a tiny pillow but tastier!

Conclusion

Creamy Pesto Gnocchi is one of those magical meals that looks fancy but is secretly super easy. It’s full of flavor, takes just 30 minutes, and leaves everyone asking for seconds. I love how the creamy pesto sauce wraps around the gnocchi like a big flavor hug. It’s comfort food at its best!
