Whether you’re a beginner or experienced baker, this blueberry banana bread is simple to make and always turns out irresistible. Get ready to enjoy a homemade loaf that’s sweet, fluffy, and full of fruity goodness in every bite!

Method

Mash & Mix

First, take your ripe bananas and mash them in a large mixing bowl using a fork or potato masher until they’re nice and smooth. This gives the bread that rich banana flavor and helps keep it moist. Once the bananas are mashed, add the melted coconut oil, packed brown sugar, eggs at room temperature, creamy peanut butter, milk of your choice, and vanilla extract. Use a whisk or hand mixer to blend everything together until you have a smooth and creamy batter. The mixture should look thick but silky, with no lumps of banana or streaks of oil.

Dry Ingredients Time

In a separate medium mixing bowl, combine your dry ingredients: all-purpose flour, baking powder, and baking soda. Stir them gently with a spoon or whisk until they are well blended. This step ensures the leavening agents (baking powder and soda) are evenly distributed throughout the flour, which will help the bread rise evenly in the oven.

Combine

Now it’s time to bring everything together. Slowly pour the dry flour mixture into the bowl with your wet banana mixture. Mix gently using a spatula or wooden spoon. Be careful not to overmix at this stage  just stir until the flour is fully incorporated and you don’t see any dry streaks. Overmixing can lead to dense or tough bread, so it’s okay if the batter is a bit lumpy.

Add Blueberries

Once your batter is ready, gently fold in the blueberries. If you’re using frozen blueberries, there’s no need to thaw them  just toss them in straight from the freezer. For best results, you can lightly coat the blueberries in a tablespoon of flour before adding them; this little trick helps prevent them from sinking to the bottom of your loaf. Use a soft folding motion to mix them in without breaking or crushing the berries, so your bread stays pretty and colorful.

Pour & Bake

Grease your loaf pan with non-stick spray or line it with parchment paper for easy removal later. Carefully pour the batter into the prepared loaf pan, spreading it out evenly with a spatula. Pop it into a preheated oven set to 350°F (175°C) and bake for about 50 to 55 minutes. You’ll know it’s done when the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.

Cool & Slice

Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. This allows the structure to set so it doesn’t fall apart when you remove it. After 10 minutes, carefully lift it out of the pan and place it on a wire rack to cool completely. Once cool, slice it up and enjoy every soft, blueberry-packed bite!

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 cup fresh or frozen blueberries (don’t thaw if frozen)

Mash & Mix: In a big bowl, mash your bananas until smooth. Add melted coconut oil, brown sugar, eggs, peanut butter, milk, and vanilla. Mix it all together until it looks creamy and smooth.
  • Dry Ingredients Time: In another bowl, stir together the flour, baking powder, and baking soda.

  • Add Blueberries: Gently fold in the blueberries with a spatula. Try not to squish them!

Notes
