Easy Pasta and Meatballs Recipe (Quick, Cheesy & Family Favorite Weeknight Dinner)

Hey there, friends!  This Easy Pasta and Meatballs recipe is a huge hit at my house my kids ask for it almost every week! It’s perfect for those busy days when you don’t feel like cooking a fancy dinner but still want something warm, yummy, and full of flavor.

I love how quick this is to throw together using some store-bought ingredients (hello, frozen meatballs and jarred sauce!). Plus, the gooey melted mozzarella on top makes it feel extra special. Let’s get into it!

Method

Heat the Sauce & Meatballs

Start by placing your marinara sauce and frozen, fully cooked meatballs into a medium-sized pot. Set the heat to medium and allow the sauce and meatballs to cook together for about 15 minutes. Stir every few minutes to make sure the sauce doesn’t stick to the bottom and the meatballs heat evenly. During this time, the flavors from the meatballs begin to mix with the sauce, making it taste like it’s been simmering all day even though it hasn’t!

Cook the Pasta

While the sauce and meatballs are cooking, bring a large pot of salted water to a boil. Once the water is bubbling, add your short pasta like penne, rotini, or shells. Cook the pasta for 2 minutes less than what the package recommends. This helps the pasta stay firm and not overcooked since it’ll cook a little more in the sauce later. Before draining the pasta, be sure to reserve ½ cup of the pasta water it’s starchy and perfect for helping the sauce cling to the noodles. Drain the rest of the water and set the pasta aside.

Mix Pasta and Sauce

Once the pasta is drained and the sauce is heated through, carefully add the cooked pasta to the pot with the marinara and meatballs. Pour in the reserved pasta water as well. Give everything a good stir so the noodles are coated nicely in the sauce and the meatballs are spread throughout. Let this mixture simmer on low for another 2 to 3 minutes. This helps the pasta soak up more flavor and lets the starchy water thicken the sauce slightly, making it extra delicious.

Add Cheese & Melt

After the pasta has simmered with the sauce, arrange slices of fresh mozzarella over the top of the dish while it’s still in the pot. Place the lid on the pot and turn off the heat. Allow the dish to sit, covered, for 5 to 7 minutes. During this time, the mozzarella will slowly melt into soft, gooey layers. If you want a golden, bubbly top, and your pot is oven-safe, you can place it under the broiler (uncovered) for just a few minutes. Keep a close eye on it, though cheese can go from perfect to burnt very quickly!

Garnish & Serve

Once the mozzarella is melted to your liking, remove the lid and get ready to serve! Add a sprinkle of grated Parmesan cheese and a few fresh basil strips on top for that extra flavor and a nice pop of color. Your pasta and meatballs are now ready to enjoy warm, cheesy, and absolutely comforting.

Necessary Tools

  • 2 pots (one for pasta, one for sauce)
  • Spoon for stirring
  • Strainer/colander
  • Knife and cutting board (for basil and mozzarella)
  • Measuring cup (for pasta water)
  • Lid for the pot (or oven for broiling)

Ingredients

  • 8 oz short pasta (like penne, rotini, or shells)

  • 16 oz Rao’s Homemade Marinara Sauce (or your favorite brand)

  • 12 oz mini beef meatballs, fully cooked and frozen

  • ½ cup reserved pasta water

  • 6 oz fresh mozzarella, sliced

  • Garnish (optional but tasty!)

  • Grated Parmesan cheese

  • Fresh basil, cut into thin strips

Directions

  • Heat the Sauce & Meatballs:
In a pot, pour in your marinara sauce and add the frozen meatballs. Heat over medium for about 15 minutes, stirring now and then.
  • Cook the Pasta:
In a second pot, bring water to a boil and add salt (this makes the pasta taste better!). Cook your pasta 2 minutes less than the time on the package. Before draining, save ½ cup of the pasta water; we’ll use it in the sauce!
  • Mix Pasta and Sauce:
Add the cooked pasta and the saved pasta water into the sauce with the meatballs. Stir everything together and let it simmer for 2-3 more minutes. The sauce will get cozy with the past, yum!
  • Add Cheese & Melt:
Place slices of fresh mozzarella over the pasta. Cover the pot with a lid and turn off the heat. Let the cheese melt for 5-7 minutes until it’s soft and gooey.
Bonus Option: You can also pop the pot (oven-safe only!) under the broiler for a few minutes to get that golden cheese top.
  • Garnish & Serve:
Sprinkle on Parmesan cheese and fresh basil if you have them. And voilà! Dinner is served.

Notes

  • Don’t forget to save the pasta water before draining. It’s the secret to helping the sauce stick to the noodles!
  • Make sure your mozzarella goes on after the final simmer, not before  or it might melt too fast and get stringy.
  • If using the broiler, don’t walk away! It only takes a few minutes to go from melty to burnt. Keep an eye on it!

Serving Suggestions

  • Serve with garlic bread or a small green salad for a full meal.
  • Kids love this with a side of baby carrots or apple slices.
  • For extra fun, serve in bowls and let everyone add their own cheese or basil toppings!

Fun Fact

Did you know meatballs were first made in ancient Persia? But Italians made them famous by mixing them with pasta! And now, it’s a family favorite everywhere.

Conclusion

This pasta and meatballs recipe is a weeknight lifesaver in my kitchen. It’s quick, delicious, and makes everyone happy at the dinner table  even the picky eaters! Whether you’re cooking for your family or just yourself, this is one of those meals that feels like a big, warm hug.
