Creamy Tortellini Soup with Sausage & Beef (Easy, Cozy Comfort Food)

There’s nothing better than a warm bowl of tortellini soup on a chilly day. This creamy tortellini soup is packed with cheese-filled pasta, savory Italian sausage, and tender ground beef, all simmered in a rich, flavorful broth. It’s the ultimate comfort food that brings restaurant-style coziness right into your kitchen.

If you’re looking for an easy, hearty, and family-friendly meal, this tortellini soup recipe is going to become a regular favorite. It’s simple to make, incredibly satisfying, and loaded with bold Italian-inspired flavors.

Method

Cook the Meat

Start by placing a large soup pot or Dutch oven over medium-high heat. Add the ground beef and mild Italian sausage directly into the pot. To build flavor right from the beginning, season the meat with 1 teaspoon of Italian seasoning, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Break up the meat with a wooden spoon as it cooks, allowing it to brown evenly. Cook the mixture for about 8–10 minutes until it’s fully browned and no longer pink. Once cooked, remove the meat from the pot and set it aside in a bowl. Make sure to leave behind about one tablespoon of fat in the pot this will help flavor the vegetables. Any extra fat can be discarded to keep the soup from becoming too greasy.

Sauté the Veggies

In the same pot, using the reserved fat, add your chopped onion, diced celery sticks, diced red bell pepper, and all the minced garlic (yes, all eight cloves!). Season the veggies with another ½ teaspoon of salt and ¼ teaspoon of black pepper to draw out their flavor as they cook. Stir everything together and sauté for about 5 minutes, or until the veggies start to soften and become aromatic. At this point, add in 2 tablespoons of tomato paste and stir it into the veggies. Let it cook for another 2 minutes to deepen the flavor this helps create a rich and savory base for the soup.

Make It Soupy

Next, sprinkle 3 tablespoons of all-purpose flour over the sautéed vegetables. Stir it well to coat the veggies and cook for about 2 minutes. This step is important because the flour will help thicken the soup later. Now, slowly pour in the 8 cups of low-sodium chicken broth, stirring constantly to prevent lumps. Once the broth is fully incorporated, add the two cans of diced tomatoes (including the juice), followed by 2 teaspoons of Italian seasoning, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, 1 teaspoon of salt, and ½ teaspoon of black pepper. Stir everything together and bring the mixture to a gentle boil. Once it’s bubbling, reduce the heat to a simmer and let it cook for 5 minutes. This allows the flavors to meld and the soup base to thicken slightly.

Bring Back the Meat & Cook the Pasta

Carefully return the cooked sausage and ground beef mixture to the pot, stirring it into the soup base. Turn the heat up and bring the soup to a boil again. Once it’s boiling, add the refrigerated cheese tortellini straight into the pot. Be sure to check the package for the cooking time and subtract about 2 minutes from it. For example, if the package says to cook the tortellini for 7 minutes, only cook it for 5. This keeps the pasta from getting too soft later on. Stir gently so the tortellini don’t stick together or break apart.

Make It Creamy

Once the tortellini is almost cooked, pour in the 1½ cups of heavy cream. Bring the soup back to a gentle boil so the cream can fully warm and mix in. Right after the soup begins to bubble, toss in two generous handfuls of fresh baby spinach. Stir the soup gently to help the spinach wilt. Let it simmer for another 2 minutes to finish cooking everything through. At this point, give the soup a taste and adjust the seasoning if needed add more salt, pepper, or seasoning to your liking.

Once done, ladle the soup into bowls, top with freshly grated parmesan cheese, and serve warm. It’s delicious right away and tastes even better the next day!

Ingredients

  • 20 oz refrigerated cheese tortellini

  • 1 lb ground beef

  • 1 lb mild Italian sausage

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • Veggies & Aromatics

  • 2 celery sticks, diced

  • 1 red bell pepper, diced

  • 1 medium onion, diced

  • 8 garlic cloves, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • Soup Base

  • 2 Tbsp tomato paste

  • 3 Tbsp all-purpose flour

  • 8 cups low-sodium chicken broth

  • 1½ cups heavy cream

  • Two 14.5 oz cans of diced tomatoes

  • 2 tsp Italian seasoning

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp salt (more to taste)

  • ½ tsp black pepper

  • 2 handfuls of baby spinach

Directions

  • In a large pot, add the ground beef and Italian sausage. Season with 1 tsp Italian seasoning, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, and ¼ tsp pepper. Cook for 8–10 minutes until browned. Take the meat out of the pot and leave about 1 tablespoon of fat behind. Get rid of the rest.
  • Add diced onion, celery, red bell pepper, and minced garlic to the pot. Season with ½ tsp salt and ¼ tsp pepper. Cook for 5 minutes until soft and fragrant. Add tomato paste and cook for 2 more minutes.
  • Sprinkle in 3 tablespoons of flour and stir for 2 minutes to thicken things up. Slowly pour in the chicken broth while stirring. Add the diced tomatoes, 2 tsp Italian seasoning, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp salt, and ½ tsp pepper. Bring it all to a boil, then lower the heat and let it simmer for 5 minutes.
  • Put the cooked beef and sausage back in the pot. Bring to a boil. Add the cheese tortellini and cook it for 2 minutes less than what the package says. (It’ll keep cooking later!)
  • Pour in the heavy cream. Once it starts bubbling, add the spinach. Stir gently and let it simmer for another 2 minutes. Taste it and adjust seasoning if needed.

Notes

  • Don’t overcook the tortellini! It can get mushy if it boils too long. Stick to 2 minutes less than the package says.
  • Add cream after boiling – If you add it too early, it could curdle.
  • Taste as you go – The soup base is super flavorful, but everyone’s salt preference is different.
  • Use fresh spinach – Frozen spinach can work, but fresh baby spinach keeps the soup lighter and more colorful.

Serving Suggestions

  • Serve with warm garlic bread or buttery dinner rolls
  • A light salad makes a great side
  • Top with extra cheese or red pepper flakes for a little kick
  • Perfect with a cozy blanket and your favorite show!

Fun Fact

Tortellini is said to be inspired by Venus, the Roman goddess of love! Legend has it that a chef peeked through a keyhole and saw her belly button and that’s how tortellini got its shape. Talk about legendary pasta!

Whether you’re serving it for family dinner or meal prepping for the week, this tortellini soup delivers big flavor with minimal effort. Try it once, and it’s guaranteed to become a go-to recipe in your kitchen.
