Taco Potato Skillet – Easy One-Pan Cheesy Dinner Loaded with Flavor

If you’re looking for a quick, comforting, and flavor-packed dinner, this taco potato skillet is exactly what you need. This one-pan meal combines all your favorite taco flavors with hearty potatoes, seasoned ground beef, beans, salsa, and melted cheese for the ultimate comfort food experience.

Perfect for busy weeknights or easy family dinners, this taco potato skillet recipe delivers bold Mexican-inspired flavors in every bite. Topped with fresh pico de gallo, creamy guacamole, and sour cream, it’s a complete meal that turns taco night into something even better.

Method

Sauté Time

To begin, place a deep skillet over medium heat and add about 1/2 tablespoon of oil. Once the oil is warm, toss in your diced onion and sauté it for about 3 minutes. You’ll know it’s ready when the onions start to turn soft and slightly translucent. Next, add in the ground beef. As it cooks, use a spatula or wooden spoon to break the beef into smaller crumbles. This helps it brown evenly and absorb all the delicious spices. Now, sprinkle in your seasonings: 1 teaspoon each of garlic powder, onion powder, chili powder, ground cumin, and paprika, followed by 1/2 teaspoon of dried oregano, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and a pinch of red pepper flakes for a gentle kick. Stir everything together and cook for another 3 to 4 minutes, allowing the meat to soak up all those bold flavors and brown nicely.

Mix It Up

Once the beef is mostly cooked and your kitchen smells amazing, it’s time to layer in even more goodness. Add the diced potatoes straight into the skillet, followed by the rinsed and drained pinto beans. Pour in the chunky red salsa and 1/2 cup of water to give it the right consistency. Now sprinkle in your second batch of seasonings to really bring it all together: 1 teaspoon each of garlic powder and onion powder again, along with 1/2 teaspoon each of chicken bouillon powder, chili powder, ground cumin, salt, and black pepper. Stir everything really well, making sure the potatoes are coated with the flavorful mixture. Once combined, gently flatten the contents with your spatula so everything cooks evenly.

Simmer and Chill

Lower the heat to a gentle simmer and cover the skillet with a lid. This helps trap in steam, which is super important for cooking the potatoes all the way through. Let everything cook for about 20 to 25 minutes. But here’s a tip: check on the potatoes around the 15-minute mark. If they’re diced small, they might already be fork-tender,  which means you can easily poke a fork into them without resistance. Give the skillet a quick stir every now and then to prevent anything from sticking to the bottom and burning.

Make the Toppings

While your skillet is doing its thing, it’s the perfect time to whip up your fresh toppings. For the pico de gallo, dice the tomatoes, red onion, jalapeño, and chop the cilantro. Toss them together in a bowl with the juice of one lime and a sprinkle of salt to taste. For the guacamole, mash the avocados until creamy, then mix in 2 to 3 tablespoons of the pico de gallo, squeeze in the juice of half a lime, and season with salt. These toppings are super simple but add a burst of freshness that takes this dish to the next level.

Cheesy Magic

Once the potatoes are soft and the skillet mixture is perfectly thickened, sprinkle shredded mozzarella and cheddar cheese evenly across the top. There’s no need to mix it in let it sit right on top like a warm, cheesy blanket. Cover the skillet again with the lid and let the cheese melt for about 5 minutes. The steam will help it melt smoothly into the skillet, turning it gooey and irresistible.

Time to Serve

Finally, it’s time to plate up! Scoop a generous helping of the taco potato skillet onto your plate. Top it with a spoonful of guacamole, a scoop of pico de gallo, and a dollop of sour cream. Add a lime wedge on the side for a fresh citrusy finish. Every bite is packed with flavor, texture, and taco goodness all in one pan!

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Extras

  • Sour cream

  • Lime wedges

  • Pico de Gallo

  • 3 Roma tomatoes, small dice

  • 1/4 medium red onion, small dice

  • 1/2 jalapeño, deseeded, small dice

  • 1/2 bunch of cilantro, chopped

  • Salt to taste

  • Guacamole

  • 2 ripe avocados, mashed

  • 2-3 tbsp of the pico de gallo

  • 1/2 lime, juiced

  • Salt to taste

Directions

  • Sauté time! Heat 1/2 tbsp oil in a deep skillet. Add the diced onion and cook for 3 minutes until it starts to soften. Then add the ground beef and break it up with a spatula.
Sprinkle in: garlic powder, onion powder, chili powder, cumin, paprika, oregano, salt, black pepper, and red pepper flakes. Cook for 3-4 minutes until the beef starts browning.
  • Mix it up: Add the diced potatoes, pinto beans, chunky salsa, water, and the second batch of seasonings (don’t forget the bouillon!). Stir it all together and flatten it a bit with your spatula.
  • Simmer and chill: Cover with a lid and turn the heat to low. Let it cook for 20–25 minutes. Check the potatoes at around 15 minutes, they should be fork-tender (poke easily with a fork).
  • Make the toppings! While the skillet is cooking, mix up your pico de gallo and guacamole. These fresh toppings make the dish sing!
  • Cheesy magic: Once the potatoes are soft, sprinkle mozzarella and cheddar cheese evenly on top. Cover again and let it sit for 5 more minutes until the cheese melts like a dream.
  • Time to serve: Scoop the taco skillet onto a plate and top with guac, pico de gallo, and a spoonful of sour cream. Add a lime wedge for a zesty kick!

Notes

  • Dice your potatoes small and evenly so they cook faster and at the same time.
  • Don’t forget to stir the skillet a few times while it simmers, it keeps the potatoes from sticking to the bottom.
  • Keep an eye on the heat! Too high and the bottom might burn; too low and the potatoes may not cook through.
  • Make the guac and pico fresh while the skillet cooks, they taste best that way!

Serving Suggestions

  • Serve with tortilla chips on the side for dipping!
  • Wrap it in a warm tortilla for a handheld version.
  • Add shredded lettuce for a crunchy twist.
  • Make it a taco bowl by serving it over rice or quinoa.
