Strawberry Cobbler: A Sweet and Comforting Dessert

There’s nothing quite like a warm, bubbly cobbler fresh out of the oven! Strawberry cobbler is one of my absolute favorite desserts because it’s simple, fruity, and packed with flavor. The sweet, juicy strawberries combined with a buttery, golden crust create the perfect balance of flavors. Whether you’re making this for a family gathering or just to satisfy your sweet tooth, this easy recipe will have everyone asking for seconds!

Method

Preheat and Prepare

The first step in making a delicious strawberry cobbler is to preheat your oven to 375°F. Preheating ensures that the cobbler bakes evenly and rises properly. While the oven is heating, take a moment to gather all your ingredients and tools, so everything is ready to go.

Prepare the Strawberries

To create a sweet and flavorful fruit filling, start by washing your strawberries thoroughly under cool running water. Once cleaned, remove the green stems and cut the strawberries into quarters. Place the sliced strawberries into a large mixing bowl. To enhance the natural sweetness of the berries, add 1/2 cup of sugar. Next, sprinkle in 2 teaspoons of cornstarch, which helps thicken the juices as the cobbler bakes, preventing it from becoming too watery. To brighten the flavor, zest one whole lemon and add it to the mixture, followed by the juice of half a lemon. Mix everything together until the strawberries are well coated, then set the bowl aside to allow the flavors to meld.

Make the Batter

In a separate large mixing bowl, prepare the batter for the cobbler topping. Begin by adding 1 1/2 cups of all-purpose flour, followed by 1 cup of sugar and 2 teaspoons of baking powder, which will help the batter rise and create a light texture. Add in 1/2 teaspoon of salt to balance the flavors. Crack two large eggs into the bowl and pour in 1 cup of milk along with 1 teaspoon of vanilla extract for a hint of sweetness. Using a whisk, stir the mixture vigorously until the batter is smooth and free of lumps. This batter will serve as the base that surrounds the juicy strawberries while baking, creating a tender and golden crust.

Melt the Butter

For a rich and buttery flavor, place one stick (1/2 cup) of unsalted butter into a 12-inch cast-iron skillet or baking dish. Transfer the skillet to the preheated oven and allow the butter to melt completely. This step not only adds flavor but also prevents the cobbler from sticking to the dish. Keep an eye on the butter as it melts to avoid burning. Once fully melted, carefully remove the skillet from the oven using oven mitts.

Assemble the Cobbler

Now that the butter is melted, it’s time to assemble the cobbler. Immediately pour the prepared batter into the skillet over the melted butter. Do not stir the contrast between the butter and the batter helps create a beautifully crisp and golden crust as it bakes. Next, take the strawberry mixture and evenly distribute it over the batter, ensuring all the juices are included. Again, avoid stirring; the batter will rise around the fruit while baking, creating a deliciously rustic cobbler texture.

Bake the Cobbler

Carefully place the skillet back into the oven and bake for 35-45 minutes. Baking times may vary depending on your oven, so begin checking around the 35-minute mark. The cobbler is ready when the top is golden brown and the batter is fully set in the middle. You can test this by inserting a toothpick in the center if it comes out clean or with a few moist crumbs, your cobbler is done. The strawberry filling should be bubbling around the edges, indicating that the fruit has softened and released its juices.

Cool and Serve

Once baked to perfection, remove the cobbler from the oven and allow it to rest for at least 15 minutes. This resting period is crucial, as it allows the juices to thicken slightly, making the cobbler easier to serve. Spoon generous portions onto plates or bowls and enjoy it warm. For an extra indulgent touch, serve with a scoop of vanilla ice cream or a dollop of whipped cream. The combination of warm, gooey strawberries and cold ice cream creates the perfect bite every time!

Ingredients

  • For the Strawberry Filling

  • 2 lbs strawberries, washed, stemmed, and quartered

  • 1/2 cup sugar

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • 2 tsp cornstarch

  • For the Batter

  • 1 1/2 cups all-purpose flour

  • 1 cup sugar

  • 1 cup milk

  • 2 large eggs

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 1/2 cup unsalted butter (1 stick)

Directions

  • Preheat and Prepare: Preheat your oven to 375°F.
  • Prepare the Strawberries: In a bowl, toss the quartered strawberries with sugar, cornstarch, lemon zest, and lemon juice. Mix well and set aside to let the flavors meld.
  • Make the Batter: In a separate mixing bowl, whisk together the flour, sugar, baking powder, milk, eggs, vanilla, and salt. Whisk until the batter is smooth and set aside.
  • Melt the Butter: Place one stick of butter into a 12-inch cast-iron skillet (or a baking dish) and put it in the oven. Allow the butter to melt completely.
  • Assemble the Cobbler: Remove the skillet from the oven and carefully pour in the batter. Do not stir! Evenly distribute the strawberries over the batter, making sure to pour in all the juices.
  • Bake: Bake for 35-45 minutes, or until the cobbler is golden brown on top and the batter is fully set in the center.
  • Cool and Serve: Let the cobbler rest for at least 15 minutes before serving. Enjoy it warm with a scoop of vanilla ice cream!

Notes

  • Don’t stir the batter once the strawberries are added! The magic of a cobbler is that the batter rises around the fruit as it bakes, creating a delicious, golden topping.
  • Make sure your butter is fully melted before pouring in the batter to get that crispy edge.
  • Use fresh, ripe strawberries for the best flavor. If your strawberries are a bit tart, you can add an extra tablespoon of sugar.
  • Keep an eye on the oven! Baking times may vary depending on your oven, so start checking around the 35-minute mark.

Serving Suggestions

  • This cobbler is best enjoyed warm with a big scoop of vanilla ice cream on top.
  • For an extra crunch, sprinkle some chopped nuts or granola over it.
  • A drizzle of honey or caramel sauce takes it to the next level!
  • Serve with fresh whipped cream or a dusting of powdered sugar.

Fun Fact

Did you know that cobblers got their name because the topping resembles a cobbled street? Unlike pies, which have a solid crust, cobblers have a more rustic, biscuit-like or cake-like topping!

Conclusion

Strawberry cobbler is the perfect dessert to make when you want something warm, sweet, and satisfying. It’s easy to whip up and perfect for any occasion. Whether you’re serving it for a family dinner or enjoying it on a cozy night in, this cobbler will always hit the spot. Try it out and let me know how it turns out for you!
