Spinach Egg Soup: A Comforting Bowl of Goodness

There’s something so comforting about a warm, hearty soup, don’t you think? One of my absolute favorites is Spinach Egg Soup it’s not just nourishing but also has a bright, zesty flavor that keeps you coming back for more. This soup is inspired by the traditional Sorrel Soup (Shchavel Soup), but instead of sorrel, I’m using spinach! To get that slightly tangy, signature taste, I add buttermilk and a hint of lemon juice it’s delicious!

Method

Sautéing the Vegetables

To start, heat the cooking oil and butter in a large pot over medium heat. Once the butter has melted and the oil is shimmering, add the diced onions and grated carrots. Sauté them together for about 5-6 minutes, stirring occasionally, until the onions turn translucent and the carrots are softened. The combination of butter and oil ensures that the vegetables develop a rich, hearty flavor without burning.

Adding the Potatoes and Rice

Next, it’s time to incorporate the potatoes and rice. If you’re using russet potatoes, make sure they’re peeled and diced. However, if you’re opting for little company potatoes, you can leave the skins on for extra texture. Add both the potatoes and the rice to the pot, stirring to coat them with the onion and carrot mixture. This step allows the rice to soak up some of the fragrant oils, enhancing its taste.

Bringing the Soup to a Boil

Pour in the water, then add the Better Than Bouillon chicken base. Make sure to stir well to dissolve the bouillon completely. Drop in the bay leaves, and season the soup with salt and white pepper. Bring the mixture to a boil over medium-high heat. Once it’s boiling, reduce the heat to a gentle simmer and cook for 10-12 minutes. This will allow the potatoes to become tender while the rice softens and plumps up.

Preparing the Buttermilk Mixture

While the soup is simmering, take a moment to prepare the creamy element of the dish. In a Pyrex measuring cup, combine the buttermilk and sour cream. Whisk the mixture vigorously until smooth and lump-free. This step is crucial to ensure the buttermilk and sour cream blend seamlessly into the soup without curdling.

Incorporating the Buttermilk Mixture

Once the potatoes and rice are cooked through, reduce the heat to low. Slowly pour the buttermilk mixture into the soup while stirring continuously. This gradual addition helps to maintain a smooth, creamy texture. Allow the soup to come back to a gentle boil, but do not let it boil vigorously as this could cause the dairy to separate.

Finishing Touches

Add the chopped scallions, fresh spinach, and chopped hard-boiled eggs to the pot. Stir gently to incorporate. Let the soup return to a light boil once more to ensure the flavors meld together. Finally, season with additional salt and pepper if needed. Just before serving, sprinkle in the dill (either dry or fresh) and squeeze the juice of half a lemon over the soup. This final touch brightens the flavor profile and balances the richness.

Serving the Soup

Turn off the heat and let the soup rest for a few minutes before ladling it into bowls. Serve warm, garnished with a little extra dill if desired. Enjoy the vibrant, creamy, and comforting flavors of this delightful Spinach Egg Soup!
