No-Bake Pumpkin Spice Cereal Bars (Easy, Chewy & Ready in 20 Minutes!)

If you’re anything like me, you love all things pumpkin spice cereal bars when fall rolls around. But guess what? You don’t have to wait for autumn to get your pumpkin spice fix! These Pumpkin Spice Cereal Bars are sweet, chewy, and super easy to make any time of year. They’re perfect for after-school snacks, movie nights, or even a quick breakfast on-the-go. Plus, no oven needed just melt, mix, and munch!

Method

Melting the Coconut Oil & Marshmallows

To start, place a medium-sized saucepan over medium-high heat and add in the coconut oil. Let it melt completely; this should only take a minute or two. Once melted, reduce the heat to low to prevent burning the next ingredients. Add in the mini marshmallows and stir continuously using a spoon or spatula. You’ll want to keep stirring gently as the marshmallows melt down into a smooth, glossy mixture. Be patient during this part, rushing or turning the heat too high can cause the marshmallows to harden or burn, which makes mixing later harder.

Adding Flavor

Once the marshmallows are fully melted and silky smooth, it’s time to boost the flavor! Add in the pumpkin pie spice and vanilla extract. Stir well to ensure the spices and vanilla are fully blended into the marshmallow mixture. You’ll start to smell that warm, cozy aroma of pumpkin spice yum!

Mixing in the Cereal

Now, remove the saucepan completely from the heat. It’s important to do this before adding the cereal so it doesn’t get soggy or overcooked. Pour in your 5 cups of cereal you can use either rice crisps or corn flakes depending on your preference. Use your spatula or spoon to gently but thoroughly fold the cereal into the marshmallow mixture. Keep mixing until every piece of cereal is evenly coated and there are no dry spots left.

Pressing into the Pan

Next, line a 9×9 or 9×13 inch pan with parchment paper this makes it much easier to lift the bars out later. Carefully pour the cereal mixture into the lined pan. Use the back of your spoon or spatula to gently press the mixture down into an even layer. Don’t press too hard; just enough to flatten the top and make the bars hold together. Pressing too firmly can make the bars too dense or crunchy instead of soft and chewy.

Optional: Adding White Chocolate Drizzle

If you’d like to add a little extra sweetness and a fancy finish, this optional white chocolate drizzle is for you! In a microwave-safe bowl, add 1 cup of white chocolate chips and 1 tablespoon of coconut oil. Microwave in 20-second bursts, stirring in between each burst, until the chocolate is smooth and fully melted. Use a spoon or fork to drizzle the melted white chocolate over the cereal bars in the pan. You can make it look swirly or zigzaggy whatever feels fun!

Letting It Set

Place the pan in the fridge for about 30 minutes to allow the bars to cool and set. This step helps everything firm up so you can cut clean, neat squares. Once they’re chilled and the chocolate (if added) has hardened, take the pan out of the fridge, lift the bars out using the parchment paper, and slice into 12 even squares. Now they’re ready to enjoy!
