Peppermint Mocha Cookies: A Delicious Chocolatey Treat!

Hi, cookie lovers! Today, I’m excited to share a recipe that is perfect for holiday gatherings or any day when you want something sweet and minty. Peppermint Mocha Cookies are chocolatey, crunchy, and filled with delicious peppermint flavor. Let’s get baking!

Method

Preparing the Oven and Ingredients

Start by setting your oven to 350 degrees Fahrenheit so it can warm up while you get your ingredients ready. Next, gather all your ingredients and tools on your workspace. Make sure the butter is at room temperature, soft enough to mix easily.

Making the Cookie Dough

In a large mixing bowl, put the softened butter and packed brown sugar. Use your electric mixer or a sturdy mixing spoon to cream them together until the mixture looks fluffy and smooth. Once that’s ready, add the egg, vanilla extract, and peppermint extract to the mixture. Stir well, making sure everything is combined and smooth.

Adding Dry Ingredients

Now it’s time to add your dry ingredients. Pour the flour, cocoa powder, and baking soda into the bowl with your butter mixture. Mix these ingredients gently but thoroughly, stirring until you get a thick, chocolatey dough. Next, carefully fold in your dark chocolate chips, mixing gently until they are evenly spread throughout the dough.

Shaping and Baking the Cookies

Scoop small pieces of dough, roughly about half an inch in size, and roll them between your hands to form neat, smooth balls. Place each cookie dough ball onto a baking sheet that has been lined with parchment paper. Make sure to leave a little space between each ball since they’ll spread slightly while baking. Slide the baking sheet into your preheated oven and bake the cookies for about 10 minutes. Once the timer goes off, carefully remove the cookies from the oven and allow them to cool completely on the baking sheet.

Preparing Chocolate Coating

While the cookies cool down, start making the delicious chocolate coating. In a microwave-safe bowl, add dark chocolate and coconut oil. Melt this mixture in your microwave in 30-second intervals, stirring well after each time, until the chocolate is silky smooth and easy to dip into.

Decorating and Chilling Cookies

Take each cooled cookie and carefully dip half of it into the melted chocolate. Allow excess chocolate to drip off gently, then immediately decorate each cookie with sprinkles or extra crushed peppermint candy while the chocolate is still wet. Place the decorated cookies back onto the parchment-lined baking sheet.

Finally, put the cookies into your refrigerator. Let them chill there until the chocolate coating becomes hard and fully set. After the chocolate is hardened, take the cookies out of the fridge they are now perfectly ready to serve and enjoy!

Ingredients

  • For the Cookies:

  • 1 cup brown sugar, packed

  • 1/2 cup butter, room temperature

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tsp peppermint extract

  • 1 cup all-purpose flour

  • 1/3 cup cocoa powder

  • 1/2 tsp baking soda

  • 3/4 cup dark chocolate chips

  • 1/2 cup crushed peppermint candy

  • For the Chocolate Coating:

  • 1/2 cup dark chocolate

  • 1/2 tbsp coconut oil

  • Sprinkles and/or extra crushed peppermint candy

Directions

  • First, preheat your oven to 350 degrees Fahrenheit. In a big bowl, cream together the butter and brown sugar until fluffy. Mix in the egg, vanilla extract, and peppermint extract until combined. Next, add flour, cocoa powder, and baking soda. Stir it up until your dough becomes thick.
  • Gently fold in the dark chocolate chips. Yum! Scoop about 1/2 inch sized balls from the dough, roll each into a nice ball with your hands, and place them on a baking sheet lined with parchment paper. Bake your cookie dough balls in the oven for about 10 minutes. Then, take them out and let them cool down.
  • While cookies cool, melt the dark chocolate and coconut oil together in a microwave-safe bowl for about 30 seconds at a time until it’s nice and smooth. Dip half of each cooled cookie into this melted chocolate. Then, quickly decorate with sprinkles or extra crushed peppermint. Put cookies in the fridge until the chocolate coating gets hard. Now they’re ready to enjoy!

Notes

  • Don’t over-bake the cookies! They will finish cooking outside the oven as they cool.
  • Be gentle when dipping cookies into chocolate so they don’t break apart.
  • Always chill cookies until chocolate is completely hardened for best results.

Serving Suggestions

  • Serve these delicious cookies with a cold glass of milk or hot cocoa.
  • They also taste amazing alongside peppermint ice cream.
  • Pack some into a pretty tin for a thoughtful gift!

Fun Fact
