If you love peanut satay tofu recipe, you’re going to love this flavorful, protein-packed dish! This peanut satay tofu recipe is crunchy, saucy, and served with fresh vegetables and rice, making it the perfect easy vegan meal for busy weeknights. Inspired by Thai flavors, this peanut satay tofu recipe delivers a delicious balance of creamy peanut sauce, crispy baked tofu, and vibrant veggies all in one satisfying bowl. It’s simple to make, nourishing, and tastes just like your favorite restaurant-style satay dish at home.

Method

Make the Sauce

To start, we’ll prepare the star of the show, the peanut satay sauce! In a small saucepan, combine ½ cup of peanut butter, 3 tablespoons of soy sauce, 1 tablespoon of red curry paste, 1 tablespoon of brown sugar, 1 tablespoon of rice wine vinegar, 2 peeled garlic cloves, and 1 teaspoon of freshly peeled and chopped ginger. Turn the heat to low and gently warm everything up. Stir occasionally just until it becomes easier to mix together. You don’t want it boiling, just warm and blended. Once it’s nicely loosened, take an immersion blender (or a regular blender) and blend everything until the sauce is smooth and creamy. This sauce is packed with flavor and adds that rich, nutty punch to the dish!

Prep the Tofu

Now let’s move on to the tofu. Start by pressing your block of firm tofu to remove excess water. This is important for getting that golden, crispy texture later. Once pressed, cut the tofu into bite-sized cubes. Place the cubes into a mixing bowl and drizzle with 1 to 2 tablespoons of soy sauce and 1 tablespoon of olive oil. Sprinkle in 1 teaspoon of garlic powder and stir everything gently to coat the tofu evenly. After that, add 1 tablespoon of cornstarch and toss again to make sure each piece has a light coating. This is the secret to that irresistible crispiness once baked!

Bake the Tofu

Once your tofu is prepped, it’s time to get it into the oven. Thread the tofu cubes onto skewers (wooden or metal both work fine, just remember to soak wooden skewers in water for about 10 minutes first so they don’t burn). Lay the skewers out on a baking tray, making sure they’re spaced out so the heat can hit all sides. Bake the tofu at 375°F (190°C) for 30 minutes, flipping the skewers every 10 minutes so the tofu browns evenly and develops a nice golden crust. The edges should look slightly crisp and the tofu should feel firm when you press it lightly.

Assemble the Bowl

While the tofu is baking, you can get your bowl ready. Start with a scoop of warm, fluffy sushi rice at the bottom of your bowl. Then, layer on your fresh, colorful veggies  shredded red cabbage for crunch, thin carrot strips, sweet red pepper slices, and cool cucumber sticks. Once the tofu is done baking, remove it from the oven and gently slide it off the skewers. Place the golden tofu cubes on top of the rice and veggies. Finally, pour that creamy, dreamy peanut satay sauce over everything. You can go light or drench it with your call! And just like that, your bowl is ready to enjoy.

Ingredients

  • For the Peanut Satay Sauce:

  • ½ cup peanut butter

  • 3 tablespoons soy sauce

  • 1 tablespoon red curry paste

  • 1 tablespoon brown sugar

  • 1 tablespoon rice wine vinegar

  • 2 cloves garlic (peeled)

  • 1 teaspoon fresh ginger (peeled and chopped)

  • For the Tofu:

  • 1 block firm tofu (pressed and diced)

  • 1–2 tablespoons soy sauce

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 tablespoon cornstarch

  • For the Bowl:

  • Cooked sushi rice

  • Shredded red cabbage

  • Sliced carrots

  • Sliced red pepper

  • Cucumber sticks

Directions

  • Step 1: Make the Sauce
In a small saucepan, add peanut butter, soy sauce, red curry paste, brown sugar, rice vinegar, garlic, and ginger. Warm it up over low heat, just until it’s easy to stir. Then blend it until smooth – I use my immersion blender, but any blender works! Set aside.
  • Step 2: Prep the Tofu
Dice your tofu into bite-sized cubes. In a bowl, mix the tofu with soy sauce, olive oil, and garlic powder. Stir well. Now sprinkle in the cornstarch and mix again until the tofu looks evenly coated.
  • Step 3: Bake the Tofu
Thread the tofu cubes onto skewers. Place them on a baking tray and bake at 375°F (190°C) for 30 minutes. Flip the skewers every 10 minutes so they get nice and golden on all sides.
  • Step 4: Assemble the Bowl
Scoop some fluffy sushi rice into your bowl. Add crunchy red cabbage, carrots, red pepper, and cucumber. Lay your crispy tofu skewers on top and drizzle with that creamy peanut sauce. Yum!

Notes

  • Don’t skip pressing the tofu this helps it get crispy in the oven instead of soggy.
  • Use low heat when warming the sauce so it doesn’t burn or get too thick.
  • Mix the cornstarch in last so it sticks nicely to the tofu and helps it crisp up during baking.
  • If you’re using wooden skewers, soak them in water for about 10 minutes before baking so they don’t burn.

Serving Suggestions

  • Serve with a wedge of lime for a zesty twist.
  • Sprinkle chopped peanuts or sesame seeds on top for a little crunch.
  • Add a side of steamed edamame or a simple miso soup if you want to turn it into a full meal.
  • Not into rice? Try this with soba noodles or quinoa instead!
