Healthy Peanut Butter Fudgy Brownies (Gluten-Free & Easy Recipe)

Hey there, sweet treat lovers! Today, I’ve got something totally yummy and super easy for you  Peanut Butter Fudgy Brownies! These are rich, chewy, chocolatey, and made with healthy ingredients like almond flour and almond milk. Oh, and did I mention there’s peanut butter and chocolate chips? Yep, it’s a dream come true in brownie form. Let’s get baking!

Method

Mix the Wet Ingredients

Start by grabbing a medium-sized mixing bowl. Add the peanut butter, honey, vanilla extract, and almond milk into the bowl. Using a spoon or a whisk, stir everything together until the mixture becomes smooth and creamy. The honey helps sweeten things naturally, while the almond milk loosens up the peanut butter for a silky base. Make sure everything is well combined, with no lumps of peanut butter left behind. This wet mixture is what gives your brownies their rich, fudgy texture.

Sift and Combine the Dry Ingredients

In a separate bowl, it’s time to prepare your dry mix. Take your almond flour, cocoa powder, and baking powder, and sift them together into the bowl. Sifting is optional but highly recommended  it helps break up any clumps and makes sure your batter turns out smooth. Once sifted, gradually add the dry ingredients into your wet mixture. Stir everything together gently until the ingredients are just combined. Be careful not to overmix  you want the batter to stay light and fudgy, not dense or cakey.

Fold in the Chocolate Chips

Now comes the most exciting part: chocolate! Take a handful (or two, if you’re feeling extra indulgent) of chocolate chips and fold them into your batter. Folding means gently turning the batter over itself so the chocolate is evenly mixed in without overworking it. This step adds little bursts of melty chocolate throughout the brownies once baked, making every bite extra special.

Prepare to Bake

Once your batter is ready, grab a small loaf tin and line it with parchment paper or lightly grease it to prevent sticking. This recipe is designed for a mini batch, so a loaf tin works better than a full-size brownie pan. Pour the batter into the tin and use the back of a spoon or a spatula to smooth out the top evenly. This helps it bake uniformly and look nice and neat once done.

Bake to Perfection

Preheat your oven to 350°F (175°C), then pop the tin in the oven and bake for about 22 to 25 minutes. You’ll know it’s done when the top looks set and a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). Try not to overbake  you want them fudgy, not dry.

Cool and Slice

Once baked, take the brownies out of the oven and let them cool right in the pan. This step is super important because fudgy brownies need time to firm up before slicing. If you cut them too soon, they might fall apart  and while still delicious, it’s always nicer to have clean, neat squares. After about 15–20 minutes, lift them out using the parchment paper and slice them into 6 mini brownie squares.

Necessary Tools

  • Mixing bowls
  • Spoon or whisk
  • Measuring cups and spoons
  • Sifter (optional but helps make it smooth)
  • Lined loaf tin (not a big brownie pan  this is a mini recipe!)
  • Oven

Ingredients

  • 1 cup almond flour

  • 1/4 cup cocoa powder

  • 1/4 cup peanut butter

  • 3 tablespoons honey

  • 1/2 cup almond milk

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

  • A handful of chocolate chips (as much as your heart wants!)

Directions

  • Mix the wet stuff first: In a bowl, stir together the peanut butter, honey, vanilla, and almond milk until it’s creamy and smooth.
  • Sift and stir: In another bowl, sift the almond flour, cocoa powder, and baking powder together. Then slowly add it to your wet mix and stir well.
  • Add chocolate magic: Gently fold in your chocolate chips. (Try not to eat them all before they go in!)
  • Bake it up: Pour the batter into a lined loaf tin and smooth out the top.
  • Into the oven: Bake at 350°F (175°C) for 22–25 minutes.
  • Cool & enjoy: Let them cool before slicing  they’re fudgy and soft, so this helps them hold their shape!

Notes

  • Don’t skip sifting the dry ingredients; it keeps the batter smooth and lump-free.
  • Don’t overmix once the dry and wet ingredients are combined. Mix until just combined to keep them fudgy, not cakey.
  • Use a loaf pan and not a regular brownie pan. This recipe is for a smaller batch, and a loaf pan helps it bake perfectly in the middle.
  • Let it cool before cutting! Fudgy brownies need a little rest time or they’ll be too soft to slice.

Serving Suggestions

  • Add a scoop of vanilla ice cream on top
  • Drizzle some melted peanut butter or chocolate sauce
  • Sprinkle crushed nuts for a little crunch
  • Enjoy with a glass of cold almond milk!

Fun Fact

Did you know peanuts aren’t actually nuts? They’re legumes  just like beans! But we don’t mind, because peanut butter still tastes amazing in brownies.

Conclusion

There you have it, my go-to Peanut Butter Fudgy Brownies that are quick, easy, and totally delicious. They’re great for snack time, dessert, or even a little afternoon pick-me-up. Try them out and let me know how yours turn out. Don’t forget the chocolate chips… They’re the best part!
