Lemon White Chocolate Cookies Sweet, Zesty & Super Easy!

If you’re looking for a bright, zesty cookie with a twist of creamy sweetness, you’re going to LOVE these Lemon White Chocolate Cookies! I make these every time I need a pick-me-up treat. They’re buttery, soft, and filled with gooey white chocolate chips that melt in your mouth. Plus, the lemon gives them a fresh burst of flavor that makes them feel super fancy… even though they’re actually really easy to make!

Method

Cream It Up

Start by placing your softened butter and granulated sugar into a large mixing bowl. Using an electric mixer or a sturdy hand whisk, beat the two together until the mixture turns light and fluffy. This process usually takes about 2–3 minutes with a mixer on medium speed. Creaming the butter and sugar properly is important because it adds air into the dough, helping your cookies turn out soft and tender.

Add the Flavor Party

Once your butter and sugar are well combined, it’s time to bring in the flavor! Crack in the eggs one at a time, mixing well after each one. Then add in the vanilla extract, freshly squeezed lemon juice, and that zingy lemon zest. Stir everything together until the mixture is smooth and the ingredients are fully blended. At this point, your dough should smell amazing like sunshine in a bowl!

Dry Stuff Comes Next

Next, add in the baking soda and give it a quick stir to evenly distribute it. Then gradually add the all-purpose flour, a little at a time, mixing after each addition. Be sure to scrape down the sides of the bowl to make sure everything is getting mixed in properly. The dough will get thicker as you go don’t worry, that’s exactly what we want! Just mix until the flour disappears. You don’t want to overmix at this stage because that can make the cookies tough.

Choco-Chippy Time!

Once your dough is smooth and evenly mixed, it’s time for the best part folding in the white chocolate chips! Use a spatula or wooden spoon to gently stir them into the dough until they’re spread throughout. These sweet little bits melt while baking and add a creamy surprise in every bite.

Chill Out

This step is crucial: place your cookie dough in the fridge and let it chill for 30 minutes. Chilling allows the butter to firm up, which means your cookies won’t spread too much in the oven. It also helps all those flavors get extra cozy together, making the cookies even more delicious.

Get Ready to Bake

As your dough chills, go ahead and preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to keep the cookies from sticking and to make cleanup easier.

Scoop and Roll

Once the dough has chilled, use a spoon or cookie scoop to take about 1-inch sized portions of dough. Roll each one gently between your palms to form a smooth ball. Place the dough balls onto your lined baking sheet, leaving a few inches of space between each one so they have room to spread as they bake.

Bake to Golden Perfection

Slide the tray into the preheated oven and bake the cookies for 12–15 minutes, or until the bottoms are lightly golden brown. You’ll notice the edges might look set while the centers still seem slightly soft this is perfect, as they will continue to firm up a bit as they cool.

Cool (If You Can Wait)

Remove the baking sheet from the oven and let the cookies cool for 3–5 minutes on the pan. This helps them finish baking without drying out. Then transfer them to a wire cooling rack to cool completely or enjoy one warm and gooey right away (I always do)!

Ingredients

  • 3/4 cup butter, softened to room temperature

  • 1 cup granulated sugar

  • 2 eggs, room temperature

  • 2 tsp vanilla extract

  • 1 1/2 tbsp lemon juice (fresh is best!)

  • 1/2 tbsp lemon zest

  • 1 tsp baking soda

  • 2 1/2 cups all-purpose flour

  • 2 cups white chocolate chips

Directions

  • Cream it up!
In a large bowl, cream together your softened butter and sugar using an electric mixer until it’s smooth and fluffy.
  • Add the flavor party.
Now mix in the eggs, vanilla, lemon juice, and lemon zest. Give it a good stir until everything is happy together.
  • Dry stuff comes next.
Stir in the baking soda, then gradually add the flour. Mix until the flour is fully combined no floury bits hiding at the bottom!
  • Choco-chippy time!
Fold in those delicious white chocolate chips.
  • Chill out.
Pop the dough in the fridge for 30 minutes. This helps the cookies hold their shape and makes them even tastier!
  • Get ready to bake.
Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  • Scoop and roll.
Scoop out 1-inch balls of dough, roll them with your hands, and place them on the baking sheet a few inches apart.
  • Bake to golden perfection.
Bake for 12–15 minutes, or until the bottoms are just golden brown.
  • Cool (if you can wait).
Let them cool on the baking sheet for a few minutes before transferring to a rack… or just eat one warm (you deserve it)!

Notes

  • Make sure your butter is soft but not melted. If it’s too soft or runny, your cookies might spread too much.
  • Don’t skip the chill time! It’s tempting, but chilling helps the cookies stay thick and chewy.
  • Don’t overmix the dough once the flour is in. Overmixing makes cookies tough instead of soft and tender.
  • Use fresh lemon juice and zest if you can. It makes a big difference in flavor!

Serving Suggestions

  • Pair with a glass of cold milk or a warm mug of chamomile tea.
  • Sprinkle a pinch of sea salt on top before baking for a sweet-and-salty vibe.
  • Stack a few and tie them with a ribbon for a cute homemade gift!

Fun Fact

Did you know? Lemons are actually berries! Yup, just like bananas. That means you’re technically having berry cookies how cool is that?

Conclusion

These Lemon White Chocolate Cookies are sunshine in cookie form! Bright, sweet, and a little bit fancy, they’re perfect for springtime parties, gifting, or just enjoying at home with your feet up. I hope this recipe brings as much joy to your kitchen as it does to mine. Happy baking, friend!
