These Fig, Brie, and Prosciutto Bites are one of my favorite appetizers to make! They’re sweet, salty, creamy, and wrapped in flaky puff pastry. Best of all? They look super fancy, but they’re actually really easy to put together. Perfect for parties, holidays, or when you just want a delicious little treat.
Method
Prep the Pastry
Start by preheating your oven to 400°F (204°C) so it’s nice and hot when you’re ready to bake. Take your thawed puff pastry sheet and gently roll it out on a lightly floured surface. You don’t need to roll it too thin just enough to even out the creases and make it easier to cut. Using a sharp knife or pizza cutter, divide the pastry into 24 equal squares. Each square will be the perfect little base for your appetizer bites.
Next, lightly spray a 24-count mini muffin tin with nonstick cooking spray to prevent the pastry from sticking. Then, gently press one pastry square into each muffin cup. Don’t worry if the corners stick out a bit they’ll puff up and become beautifully golden in the oven!
Add the Fillings
Now it’s time to layer the flavors! Take one piece of your sliced prosciutto (each slice should be cut into thirds, giving you 24 pieces total) and gently place it inside each pastry cup. It will create a salty, savory base. Next, add a small piece of brie cheese on top of the prosciutto. Make sure the brie is cut to fit neatly inside the cup about ¾ to 1 inch in size. The brie will melt during baking, so avoid overfilling.
Once the brie is in place, spoon about ½ teaspoon of fig butter or fig jam over each piece. This adds a sweet and fruity contrast to the creamy brie and salty prosciutto. For a touch of fresh, herby flavor, top each bite with a couple of rosemary leaves. You don’t need much just enough to give a hint of aroma and color.
Bake
Carefully place the filled muffin tin into your preheated oven. Bake for about 12 to 14 minutes, keeping an eye on them during the last few minutes. You’ll know they’re done when the puff pastry has risen and turned golden brown, and the brie has melted into gooey deliciousness. The edges might crisp up a bit, which adds a lovely texture.
Serve
Once baked, take the bites out of the oven and let them cool for 3 to 5 minutes in the muffin tin. This helps them firm up slightly so they’re easier to remove. Use a small spoon or butter knife to gently lift each bite from the tin. Serve them warm, when the cheese is still soft and melty. Notes
- Don’t overfill the pastry cups too much fig butter or cheese can bubble over and make a sticky mess.
- Make sure the pastry stays cold before baking; if it gets too warm, it won’t puff up as nicely.
- Cut the brie into small pieces so it fits well brie melts a lot, and you don’t want it spilling over.
- If your puff pastry is sticking while cutting, sprinkle a little flour on the surface.
