Curried Butter Beans Cozy, Creamy, and Full of Veggies!

If you’re looking for a cozy, creamy dish packed with flavor and healthy veggies, you’re going to love this Curried Butter Beans recipe! It’s not a traditional curry, but it’s one of my favorite ways to use spices and colorful vegetables to create something super satisfying and full of goodness. I love making this when I want a hearty meal that still feels light and nourishing.

Method

Get the flavor started

To begin, heat a generous splash of olive oil in a large pan or deep skillet over medium heat. Once the oil is warm, add your diced white onion and pressed or finely chopped garlic. Stir them gently and let them cook down for about 5 minutes, or until they become soft and translucent. The kitchen will start to smell incredible as the natural sweetness of the onion and richness of the garlic fill the air. This step builds the flavorful base of the whole dish, so take your time and don’t rush it.

Spice it up

Next, it’s time to bring in the warm, aromatic spices. Add the garam masala and curry powder straight into the pan with the cooked onions and garlic. Stir everything together so that the onions and garlic get fully coated with the spices. Let the mixture toast for a minute or two  just long enough to deepen the flavors but not so long that it burns. The heat will help the spices release their oils, turning the mixture into a fragrant, golden blend that smells like pure comfort.

Add hearty veggies

Now add your diced sweet potato, peeled and chopped carrots, and small cauliflower florets into the pan. Stir them around so they get coated with the spiced onion mixture. Then, pour in a small splash of water  just a few tablespoons  to create a bit of steam. This helps soften the vegetables without making the curry watery. Place a lid on the pan and let the vegetables cook for about 10 to 12 minutes. It’s important to stir occasionally so nothing sticks to the bottom. At this stage, you’re looking for the veggies to become mostly tender. They should still have a bit of firmness because they’ll continue cooking in the next step.

Final ingredients

Once the veggies are mostly cooked, it’s time to bring everything together. Add in the peas (frozen is totally fine, no need to thaw), the rinsed butter beans (also known as Lima beans), and the creamy coconut milk. Stir everything really well so the flavors mix beautifully. Let the curry simmer uncovered over medium heat for about 10 more minutes. This final simmer helps the coconut milk thicken slightly and allows all the ingredients to get perfectly cooked and flavorful. You’ll know it’s ready when the veggies are fork-tender, the beans are heated through, and the whole pan is bubbling gently.

Ready to serve

Give it one last stir, do a quick taste test to adjust salt or spice if needed, and your curried butter beans are ready to enjoy! The result should be creamy, colorful, and full of comforting, earthy flavor. Scoop it over your favorite grain, pair it with warm bread, or enjoy it just as it is  warm and straight from the pan.

Ingredients

  • Here’s what you’ll need:

  • 1 white onion, diced

  • 5 cloves garlic, pressed or finely chopped

  • 4 tbsp garam masala spice

  • 4 tbsp curry powder

  • 1.5 cups sweet potato, diced

  • 4 small carrots, peeled and diced

  • 1 cup cauliflower, cut into small florets

  • 1 cup peas (frozen is fine!)

  • 1 can butter beans (also called Lima beans), rinsed

  • 1/2 cup coconut milk

  • Olive oil for cooking

  • A splash of water

Directions

  • Get the flavor started:
First, heat a splash of olive oil in a large pan over medium heat. Add the diced onion and garlic. Let them cook until soft and your kitchen smells amazing (about 5 minutes).
  • Spice it up:
Add your garam masala and curry powder to the pan. Stir everything together so the onions and garlic get coated with all that tasty spice.
  • Add hearty veggies:
Throw in your sweet potatoes, carrots, and cauliflower. Add a little splash of water to help steam them. Put the lid on and let them cook until they’re mostly soft  about 10–12 minutes. Check and stir occasionally.
  • Final ingredients:
Add in your peas, butter beans, and creamy coconut milk. Stir it all together and let it simmer for another 10 minutes or until everything is perfectly cooked.
  • Ready to serve!
Once it’s hot and bubbly and the veggies are soft, you’re done!

Notes

  • Don’t overcook the veggies in the first step  they’ll finish cooking with the beans and coconut milk later. You want them a little firm at first.
  • Add water slowly. Just a splash is enough to steam the veggies. Too much, and you’ll have soup!
  • Taste your spices! Every brand is a little different. Start with the full amount, but if you’re unsure, start with less and build up.

Serving Suggestions

  • I love serving this on fluffy quinoa, but it also goes great with rice, naan bread, or even scooped up with roti.
  • Want something creamy on top? Try a dollop of cashew ricotta or even some plain yogurt.
  • For a little crunch, sprinkle some roasted seeds or chopped fresh herbs!

Fun Fact

Butter beans are also known as Lima beans, and they’re packed with fiber and protein! They’re called “butter” beans because of their soft, buttery texture once cooked. Perfect for soaking up tasty sauces like curry!

Conclusion

This Curried Butter Beans dish is one of those recipes I go back to again and again. It’s comforting, full of color, and so flavorful  plus, it’s simple enough for a weeknight dinner and impressive enough to share with friends. Whether you’re serving it over grains or scooping it with bread, it’s sure to warm you up from the inside out. Happy cooking and enjoy every bite!
