If you’re craving the cozy comfort of a classic pot pie but want something quicker and easier, this creamy chicken pot pie pasta is exactly what you need. It combines tender pasta, juicy rotisserie chicken, and hearty vegetables all coated in a rich, creamy herb-infused sauce. This creamy chicken pot pie pasta delivers everything you love about traditional chicken pot pie, without the fuss of making a crust. Perfect for busy weeknights, family dinners, or whenever you need a warm, satisfying bowl of comfort food.

Method

Sauté the Veggies

To start off, grab a deep skillet or a large pot with a lid and place it over medium-low heat. Add 2 tablespoons of unsalted butter and 1 tablespoon of oil to the pan. Once the butter has melted, toss in your diced onion, carrot, celery, and minced garlic. These aromatic veggies are the base of our flavor, so let them cook slowly and gently. Strip the leaves off two sprigs of fresh thyme and add them right into the skillet. Next, season the mix with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, ½ teaspoon of pink salt, and ¼ teaspoon of black pepper. Stir everything together and allow the veggies to sauté for about 10 minutes. You’ll know they’re ready when they become soft, slightly golden, and your kitchen starts to smell like cozy heaven.

Add the Good Stuff

Once your veggie mixture is softened and seasoned to perfection, it’s time to bring in the stars of the dish. Pour in your 16 ounces of mini bow tie pasta, followed by 2 ½ cups of shredded rotisserie chicken and 1 cup of frozen peas. These ingredients make the dish hearty and full of texture. After that, slowly pour in 3 cups of chicken broth and 2 ½ cups of heavy whipping cream. These liquids will cook the pasta and create a creamy, rich base. Now it’s time to build up even more flavor add the remaining 2 teaspoons of garlic powder, 2 teaspoons of onion powder, 1 teaspoon of pink salt, and the final ¼ teaspoon of black pepper. Lastly, place the third sprig of thyme directly into the mixture. This one will simmer with everything and infuse a subtle, herby aroma.

Cook the Pasta

With everything in the pot, turn up the heat and bring the liquid to a gentle boil. As soon as it starts bubbling, reduce the heat to low and cover the pot with a lid. Let the pasta cook for about 10 to 12 minutes. Make sure to give it a stir once around the halfway point. This helps the pasta cook evenly and keeps it from sticking to the bottom of the pan. As the pasta cooks, it soaks up the flavorful broth and cream, and everything begins to thicken into a luxurious, creamy sauce.

Make It Creamy

When the pasta is fully cooked and tender, turn off the heat and carefully remove the thyme sprig from the pot. Now comes the creamy finale: add in the 5.2 ounces of Boursin Garlic and Fine Herbs cheese. Stir everything together until the cheese melts completely and blends into the sauce, making it extra rich, smooth, and flavorful. The Boursin adds a special touch of garlic and herb goodness that ties all the ingredients together. To finish things off, sprinkle freshly chopped parsley on top for a pop of color and a hint of freshness.

Ingredients

  • 16 oz mini bow tie pasta (also called farfalle)

  • 2 ½ cups shredded rotisserie chicken

  • 3 cups chicken broth

  • 2 ½ cups heavy whipping cream

  • 1 medium onion, diced

  • 1 large carrot, small diced

  • 2 celery sticks, small diced

  • 1 cup frozen peas

  • 5-6 garlic cloves, minced

  • 5.2 oz Boursin Garlic and Fine Herbs Cheese

  • 3 tsp garlic powder (divided)

  • 3 tsp onion powder (divided)

  • 1 ½ tsp pink salt (divided)

  • ½ tsp black pepper (divided)

  • 3 sprigs fresh thyme

  • 2 Tbsp unsalted butter

  • 1 Tbsp oil

  • Fresh parsley (for garnish)

Directions

  • Sauté the veggies:
In a big deep skillet, melt butter with oil over medium-low heat. Add diced onion, carrot, celery, and garlic. Pull the leaves off two sprigs of thyme and add them in. Then, sprinkle in 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, and ¼ tsp black pepper. Let it all cook down for about 10 minutes, until the veggies get soft and smell amazing.
  • Add the good stuff:
Toss in the pasta, shredded chicken, and frozen peas. Now pour in your chicken broth and heavy cream. Add the rest of the seasonings: 2 tsp garlic powder, 2 tsp onion powder, 1 tsp salt, ¼ tsp pepper. Drop in the last sprig of thyme (don’t worry, we’ll take it out later!).
  • Cook the pasta:
Turn up the heat and let everything come to a gentle boil. Then, lower the heat to low, pop the lid on, and cook for 10–12 minutes, or until the pasta is done. Stir it once halfway through so it doesn’t stick.
  • Make it creamy:
Once it’s cooked, remove the thyme sprig and stir in the Boursin cheese until it’s all melted and creamy. Sprinkle with chopped parsley for a fresh touch.

Notes

  • Don’t forget to stir halfway through cooking or the pasta might stick to the bottom.
  • Make sure to lower the heat after the boil so the cream doesn’t curdle.
  • Taste before serving sometimes, rotisserie chicken can add extra salt, so adjust if needed.
  • If your sauce gets too thick, just add a splash of chicken broth or cream to loosen it up.

Serving Suggestions

  • Serve this with a side of garlic bread or buttery biscuits just like you’d have with chicken pot pie!
  • A simple green salad makes a great crunchy side.
  • Sprinkle with parmesan cheese if you want it extra cheesy.
  • Want it spicy? Add a pinch of red pepper flakes.

Fun Fact
