Coconut Chocolate Oat Bars – A Chewy, Chocolatey Treat!

If you love sweet, chewy snacks that are full of flavor and a little bit healthy, you’ve got to try these Coconut Chocolate Oat Bars! They’re packed with peanut butter, oats, coconut, and just the right amount of chocolate. They’re super easy to make, and guess what? You don’t even need a mixer!

Method

Mix Wet Ingredients

Start by grabbing a large mixing bowl. Crack in the two room-temperature eggs this is important because room-temp eggs mix more easily and help everything combine better. Add in your creamy peanut butter (or any nut butter of your choice), followed by the honey or maple syrup, and vanilla extract. Using a spatula or a sturdy mixing spoon, stir everything together until the mixture is smooth, thick, and fully blended. The texture at this stage will be creamy and a little sticky that’s totally perfect!

Add the Dry Stuff

Next, it’s time to add the dry ingredients. Gently pour in the rolled oats, gluten-free all-purpose flour, and baking soda. Stir slowly and carefully so that the flour doesn’t puff out of the bowl. As the dry ingredients begin to combine with the wet mixture, the batter will thicken up. Once everything looks evenly mixed, fold in the dark chocolate chips and coconut flakes. Folding means gently turning the batter over and over so the goodies are spread out evenly without breaking them up too much. You want those coconut pieces and chocolate chunks to stay whole for that perfect bite later!

Get Ready to Bake

Now that your batter is ready, it’s time to prep your baking pan. Take an 8×8 inch pan and line it with parchment paper this step makes it super easy to lift the bars out later without sticking. Scoop the batter into the pan and use a spatula or the back of a spoon to spread it out evenly. Make sure the batter reaches all the corners and is level on top so it bakes evenly.

Bake Time

Place your pan in the oven, preheated to 350°F (175°C). Let it bake for about 18 to 20 minutes. Ovens can vary, so it’s a good idea to check for doneness at the 18-minute mark. To do that, insert a toothpick into the center of the bars if it comes out clean or with just a few crumbs, they’re ready! If it comes out wet, give it another couple of minutes.

Cool It Down

Once baked, take the pan out of the oven and set it on a cooling rack or countertop. Let the bars cool completely in the pan before slicing. This helps them firm up and makes cutting much easier. Once cool, use the parchment paper to lift the bars out, place them on a cutting board, and slice into squares or rectangles whatever size you like!
