Broccoli Cheddar Soup – Warm, Cheesy Comfort in a Bowl!

There’s just something magical about a big bowl of broccoli cheddar soup. It’s creamy, cheesy, cozy, and packed with flavor. I love making this on chilly evenings or rainy days when everyone wants something warm and comforting. Plus, it’s a great way to sneak in some veggies kids won’t even notice the broccoli when it’s swimming in melted cheese!

Let me walk you through how I make it at home, along with some tips, tools, and extra fun along the way.

Method

Sauté the veggies

Start by placing a large soup pot or Dutch oven over medium heat. Add the unsalted butter and let it melt completely. Once the butter is sizzling, add in the diced onion and grated carrot. Stir everything together and sauté for about 6 to 7 minutes. This step builds the flavorful base of the soup, so let the onions become soft and slightly golden, and the carrots tender. Your kitchen will already start smelling cozy and delicious at this point.

Add garlic and flour

Next, add the minced garlic to the pot and give it a good stir. Let it cook for about 30 seconds just enough to release its aroma without letting it burn. Then, sprinkle in the flour evenly over the vegetables and begin stirring continuously. Cook the mixture for around 2 minutes to let the flour combine with the butter and veggies, forming a roux. This is an important step for thickening the soup later, so don’t rush it. You’ll notice the mixture becoming slightly paste-like that’s exactly what you want.

Pour in the chicken stock

Slowly begin pouring in the chicken stock while whisking or stirring constantly to avoid lumps. If you’re using a chicken base like Better Than Bouillon, dissolve it in hot water first, then pour it into the pot gradually. The goal is to create a smooth mixture with no clumps of flour. Once the stock is fully added, keep stirring and allow the soup to come to a gentle boil. It will begin to thicken slightly as the flour does its job.

Spice it up

Once your base is smooth and starting to thicken, it’s time to add the seasonings. Sprinkle in the salt, white or black pepper, paprika, ground coriander, nutmeg, and a pinch of cayenne pepper. Stir well so the spices are evenly distributed throughout the soup. These spices don’t just add flavor they also add warmth and depth, giving the soup that comforting, slightly complex taste we all love.

Creamy time + broccoli

Now pour in the milk and heavy whipping cream, stirring gently to combine. This is where the soup starts turning creamy and luscious. Once mixed, add in the broccoli florets. Try to cut them into small, even pieces so they cook faster and blend into the soup better. Stir everything together, then raise the heat slightly and bring the soup to a boil. Once it begins boiling, reduce the heat to a simmer and cover the pot with a lid. Let it simmer for about 10 minutes, stirring every couple of minutes to make sure nothing sticks or scorches at the bottom. This gentle cooking softens the broccoli while letting the flavors blend beautifully.

Cheese time

Once the broccoli is tender, turn off the heat completely. This is the most important step for a silky, creamy soup: adding the cheese while the soup is off the heat. Slowly sprinkle in the freshly shredded sharp cheddar cheese while stirring constantly. The cheese will melt into the hot soup, creating a smooth, rich, and velvety texture. Keep stirring until all the cheese has melted and is fully incorporated. At this point, your broccoli cheddar soup is ready to serve and trust me, it’s absolutely delicious.

Ingredients

  • 6–7 cups broccoli florets

  • 5 cups chicken stock (I use Better Than Bouillon + water)

  • 4 cups sharp cheddar cheese, freshly shredded

  • 2 cups milk

  • 1 cup heavy whipping cream

  • ½ cup unsalted butter (1 stick)

  • ½ cup flour

  • 1 medium onion, diced

  • 1 cup carrot, grated

  • 4–5 garlic cloves, minced

  • 1 tsp salt (more to taste)

  • 1 tsp paprika

  • ½ tsp white or black pepper

  • ½ tsp ground coriander

  • ¼ tsp ground nutmeg

  • ⅛ tsp cayenne pepper (add more if you like a kick!)

Directions

  • Sauté the veggies:
In your large pot, melt the butter over medium heat. Add the diced onion and grated carrots. Cook them for about 6–7 minutes until soft and smelling amazing.
  • Add garlic and flour:
Toss in the minced garlic. Stir for 30 seconds. Then, sprinkle in the flour and stir it all around for 2 minutes. This helps make the soup thick and creamy later on.
  • Pour in the chicken stock:
Slowly add your chicken stock (or water + bouillon), whisking to make sure there are no flour clumps. Let it bubble a bit and thicken.
  • Spice it up:
Add salt, pepper, paprika, coriander, nutmeg, and cayenne. Stir them in well. The smell right now? So good.
  • Creamy time + broccoli:
Pour in the milk and heavy cream. Then add the broccoli florets. Give it all a good mix. Bring the soup to a boil, then turn it down to a simmer. Cover it with a lid and cook for 10 minutes. Stir often to stop it from sticking to the bottom.
  • Cheese time!
Turn off the heat. Add the shredded cheddar cheese and stir until it’s all melted and silky smooth. And just like that… it’s ready to enjoy!

Notes

  • Stir often: Especially after adding milk and cream this soup can burn on the bottom if left alone!
  • Use freshly shredded cheese: Pre-shredded cheese has a coating that stops it from melting smoothly.
  • Add cheese off the heat: Cheese melts best when the soup isn’t boiling. Turn off the heat first so it stays creamy, not gritty.
  • Cut broccoli small: It cooks faster and blends better with the soup.

Serving Suggestions

  • Serve with a thick slice of crusty bread or a warm baguette.
  • A sprinkle of extra cheese on top makes it look fancy (and extra cheesy)!
  • Want some crunch? Top it with croutons or crispy bacon bits.
  • Great with a side salad for a full meal.

Fun Fact

Did you know broccoli and cheese have been best friends since the 1920s? Broccoli became super popular in the U.S. around that time, and cooks started mixing it with cheese to make it more kid-friendly. Genius, right?

Conclusion

Broccoli cheddar soup is cozy, cheesy comfort in a bowl. It’s easy to make, full of flavor, and perfect for family dinners or lazy weekends. You’ll feel like a soup master after making this, and trust me everyone will be asking for seconds!
