Blueberry Bran Muffins Recipe: Healthy, Moist & Easy Breakfast Muffins

Who else loves Blueberry Bran Muffins as much as I do? Especially when they’re sweet, moist, and packed with healthy stuff like wheat bran and juicy blueberries! These Blueberry Bran Muffins are one of my go-to snacks  they’re easy to make, super tasty, and even better with a crumbly coconut topping. Let’s get baking!

Method

Mixing the Wet Ingredients

To start, grab a large mixing bowl and combine the melted coconut oil and brown sugar. Use a whisk or fork to mix them until the sugar starts to dissolve and the mixture looks smooth. Next, crack in the egg and mix again until everything is well combined. Then, stir in the Greek yogurt, vanilla extract, and milk. Keep mixing until the wet mixture becomes creamy and smooth  this will be the base for your muffin batter.

Mixing the Dry Ingredients

In a separate medium-sized bowl, it’s time to get the dry ingredients ready. Add the wheat bran, flour, baking powder, baking soda, and salt. Use a spoon or whisk to gently stir these dry ingredients together, making sure everything is evenly mixed. This step is important because it helps the muffins rise evenly and gives them a nice texture.

Combining the Wet and Dry Mixtures

Now it’s time to bring the wet and dry ingredients together. Slowly add the dry mixture into the bowl with the wet ingredients. You can do this in two or three parts, stirring gently after each addition. Be careful not to over-mix here  you want to stir just enough so that there are no dry patches left, but the batter is still a bit lumpy. Over-mixing can make your muffins turn out dense instead of fluffy.

Adding the Goodies

Once your batter is mixed, sprinkle in the coconut flakes and give the batter a gentle stir to combine. Then, take your frozen blueberries (right out of the freezer!) and fold them into the batter using a spoon or spatula. Try not to stir too much  just fold them in so they’re spread throughout the batter. This keeps the blueberries whole and helps your muffins stay nice and moist.

Making the Crumble Topping (Optional)

If you want to add a sweet, crumbly topping (and I highly recommend it!), mix 2 teaspoons of melted coconut oil with 1 tablespoon of flour and 1 tablespoon of brown sugar in a small bowl. Use a fork to stir it until it turns into a crumbly texture. If it seems too dry, add a tiny bit more oil; if it feels too wet, sprinkle in a little more flour. You want a crumbly texture that you can easily sprinkle over each muffin.

Filling the Muffin Tin and Baking

Now it’s time to get these muffins in the oven! Line your muffin tin with paper liners (or lightly grease them if you don’t have liners). Scoop the batter into each cup, filling them all the way to the top. Don’t worry, these muffins don’t rise too much, so filling them full is perfect. If you made the crumble topping, sprinkle a small amount on top of each muffin before baking.

Place the muffin tin into a preheated oven at 350°F (175°C) and bake for about 18 minutes. Keep an eye on them as they bake. You’ll know they’re done when the tops are golden brown and a toothpick inserted into the center comes out clean. Let them cool for a few minutes before enjoying it!

Ingredients

  • For the muffins:

  • 4 tbsp coconut oil, melted

  • 2 tbsp brown sugar

  • 1 egg

  • 1/3 cup Greek yogurt

  • 1/4 cup milk

  • 1/2 cup wheat bran

  • 3/4 cup flour

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp vanilla

  • 1/2 tsp salt

  • 1 cup frozen blueberries

  • 1/4 cup coconut flakes

  • For the crumble topping (optional but so good!):

  • 2 tsp melted coconut oil

  • 1 tbsp flour

  • 1 tbsp brown sugar

Directions

  • Mix the wet stuff! In a large bowl, mix together the melted coconut oil and brown sugar. Then, add in the egg, Greek yogurt, vanilla, and milk. Mix it all up until it looks smooth and creamy.
  • Mix the dry stuff. In a separate bowl, combine the wheat bran, flour, baking powder, baking soda, and salt.
  • Combine it all! Slowly add the dry ingredients to the wet mixture. Stir gently until everything is mixed, but don’t over-mix (more on that below!).
  • Add the goodies. Now add in the coconut flakes and gently fold in the frozen blueberries. It’s okay if your batter turns a little purple, that’s the blueberry magic!
  • Make the crumble (optional). Mix 2 teaspoons of melted coconut oil with 1 tablespoon each of flour and brown sugar. Use a fork to mix until it becomes crumbly. You can adjust it with a tiny bit more flour or oil if needed.
  • Scoop and bake! Line your muffin tin and fill each cup to the top with batter. Sprinkle a bit of crumble on each one if you made it.
  • Bake at 350°F for about 18 minutes, or until the tops are golden and a toothpick comes out clean.

Notes

  • Don’t over-mix your batter after adding the dry ingredients. Mixing too much can make your muffins tough instead of soft and fluffy.
  • Use frozen blueberries straight from the freezer. Don’t thaw them or they’ll make the batter too wet.
  • Fill your muffin cups all the way up. These muffins don’t rise a lot, so it’s okay to fill them to the top.
  • Watch the crumble  if it looks too dry, add a tiny bit more coconut oil. If it’s too wet, sprinkle in more flour.

Serving Suggestions

  • Enjoy them warm with a little butter or nut butter.
  • Pair them with a smoothie or a cup of milk for a yummy breakfast.
  • Pack them in a lunchbox for school or work.
  • They also make a great after-school snack with a cup of tea or hot cocoa!

Fun Fact

Did you know blueberries are called a “superfood”? That’s because they’re full of antioxidants, which help keep your body healthy. And bran is full of fiber, which helps your tummy feel full and happy!

Conclusion

These Blueberry Bran Muffins are more than just tasty, they’re full of good-for-you ingredients and super easy to make. Whether you’re baking for your family, your friends, or just yourself, this recipe is a fun, healthy treat everyone will love. Give them a try and let me know how they turned out! Happy baking!
