Apple Zucchini Bread Sweet, Moist, and Totally Yummy!

Have you ever heard of Apple Zucchini Bread? If not, you’re in for a super delicious treat! This moist and slightly sweet bread is packed with shredded zucchini (yay, veggies!), juicy apple bits, and cozy spices like cinnamon. It’s like a warm hug from the oven. Even picky eaters won’t guess there’s zucchini inside!

Let’s dive into this easy, wholesome, and oh-so-tasty recipe that’s perfect for breakfast, snacks, or even dessert!

Method

Mix the Wet Ingredients

To start, grab a large mixing bowl and add the two room-temperature eggs. Crack them in and give them a gentle whisk to break them up. Next, pour in the honey, vanilla extract, melted coconut oil, and applesauce. These ingredients are the heart of the moisture and sweetness in the bread, so make sure they are fully combined and smooth. Use a spatula or whisk to stir everything together until it looks like a thick, glossy liquid. Once that’s ready, gently fold in the peeled and shredded zucchini. This step helps distribute the zucchini evenly throughout the wet base. Don’t worry the zucchini blends right in and won’t be noticeable in the final taste or texture!

Sift and Combine the Dry Ingredients

In a separate bowl, sift together the dry ingredients: flour, cinnamon, apple pie spice (if you’re using it), and baking soda. Sifting helps remove any lumps and mixes the dry ingredients evenly, which makes the bread lighter and fluffier. Once sifted, slowly add the dry mix into your wet mixture a little at a time. Stir gently with a spatula or wooden spoon just until everything is combined. Be careful not to overmix this is important! Overmixing can make the bread tough instead of soft and tender.

Fold in the Apples and Pecans

Now it’s time to add the fun parts the diced apple and chopped pecans. Fold them gently into the batter, making sure they’re spread out nicely throughout. The apple chunks give sweet, juicy bites in every slice, and if you choose to add pecans, they bring a nice crunch and nutty flavor.

Prepare the Pan and Add the Topping

Line your loaf tin with parchment paper so your bread doesn’t stick (and cleanup is easier too!). Pour the batter into the prepared pan and smooth the top with your spatula. In a small bowl, mix the cinnamon and sweetener together for the topping. Sprinkle this mixture generously over the top of the batter. It’ll create a lovely sweet crust as it bakes kind of like a muffin top but for bread!

Bake the Bread

Preheat your oven to 350°F (175°C), and once it’s ready, pop your loaf pan in. Bake for 50–60 minutes, depending on your oven. Around the 50-minute mark, check doneness by sticking a toothpick or skewer into the center of the loaf. If it comes out clean or with a few moist crumbs, your bread is ready. If it’s still wet, give it a few more minutes and check again.

Cool and Slice

When it’s done baking, take the loaf out of the oven and let it sit in the pan for at least 10–15 minutes. This resting time helps the bread set and makes it easier to slice. Once it’s mostly cooled, lift it out using the parchment paper, place it on a wire rack or plate, and let it finish cooling completely before slicing. Trust me, it’s worth the wait. Warm apple zucchini bread fresh out of the oven is pure comfort!

Ingredients

  • For the Bread:

  • 1 cup zucchini (peeled and shredded)

  • 2 eggs (room temperature)

  • ½ cup honey

  • 2 tsp vanilla extract

  • ¼ cup melted coconut oil

  • 1 cup applesauce

  • 1¾ cups all-purpose flour (regular or gluten-free)

  • 2 tsp cinnamon

  • 1 tsp apple pie spice (optional but yummy)

  • 1 tsp baking soda

  • 1 cup apple (peeled and chopped)

  • ¼ cup chopped pecans (optional for crunch)

  • For the Cinnamon Sugar Topping:

  • ¼ cup granulated sweetener

  • 1 tsp cinnamon

Directions

  • Mix the wet stuff!
In a big bowl, crack the eggs and add the honey, vanilla, melted coconut oil, and applesauce. Mix it all until it’s smooth and combined. Now fold in that shredded zucchini don’t worry, it melts right into the bread!
  • Add the dry stuff.
In another bowl, sift the flour, cinnamon, apple pie spice (if using), and baking soda. Slowly add the dry mix into the wet mix and stir just until combined. No over-mixing here!
  • Add the goodies.
Fold in the chopped apple and pecans if you’re using them. The apple bits give juicy bites and the pecans add a fun crunch.
  • Pour and top.
Line a loaf tin with parchment paper and pour the batter in. Mix your cinnamon sugar topping and sprinkle it over the top like a delicious dusting of magic!
  • Bake it!
Bake in a preheated oven at 350°F (175°C) for 50–60 minutes. It’s ready when the top is golden and a toothpick comes out clean.
  • Cool and enjoy!
Let it cool in the pan for a bit before slicing into warm, cozy goodness.

Notes

  • Don’t skip draining the zucchini: If your shredded zucchini is very watery, gently squeeze out the extra moisture before adding it to the batter.
  • Don’t overmix: Stir the batter until just combined. Overmixing makes the bread dense.
  • Check doneness: Every oven is different! Start checking at 50 minutes by poking the center with a toothpick.
  • Let it cool: Slicing too soon can make the bread fall apart. Let it cool so it holds together better.

Serving Suggestions

  • Warm it up and spread with butter or cream cheese
  • Enjoy with a cup of milk, tea, or hot cocoa
  • Add a scoop of vanilla yogurt on top for breakfast
  • Serve as a fun lunchbox treat
