Easy Gluten Free Dark Chocolate Almond Flour Cookies (Chewy & Healthy!)

If you’re looking for a super yummy cookie recipe that’s also a little better for you, you’re in the right place! These dark chocolate almond flour cookies are chewy, chocolatey, and totally dreamy. They’re made with almond flour (so no regular flour needed!), sweetened just right, and have melty white chocolate pieces that make each bite amazing. I love how easy these are to make, and the best part? They’re gluten-free and feel a little fancy without being hard at all.

Method

Mix the Wet Stuff

Start by grabbing a medium-sized mixing bowl. Add in your brown sugar, cashew butter, egg, coconut oil (make sure it’s soft and at room temperature), and vanilla extract. Using a whisk or a spoon, mix everything together really well. You want the mixture to be smooth, glossy, and creamy. This step helps everything blend evenly so you get that perfect cookie texture. Take your time and make sure there are no clumps of sugar or streaks of egg. Once it’s all combined, set this bowl aside.

Sift the Dry Stuff

In a separate large bowl, combine the almond flour, cocoa powder, and baking soda. Sifting is super important here! It helps get rid of any lumps, especially in the cocoa powder, which can get clumpy. You can use a mesh strainer or a sifter for this step. Once everything is sifted, give it a quick stir to make sure the dry ingredients are evenly mixed together.

Mix It All Up

Now it’s time to bring the two mixtures together! Slowly add the dry ingredients into the bowl with the wet mixture. Use a spatula or wooden spoon to fold them together until everything is fully mixed. The dough will be thick and a little sticky, which is exactly what you want. Make sure there are no dry pockets of flour or cocoa hiding at the bottom of the bowl.

Add the Yummy Bits

Next, it’s time to fold in the white chocolate chips. Gently stir them into the dough with your spatula, making sure they’re evenly spread out. These melty little surprises make the cookies extra special, so you want a bit of white chocolate in every bite!

Scoop the Dough

Line your baking sheet with parchment paper to keep the cookies from sticking. Using an ice cream scoop or a spoon, scoop out small balls of dough about 1 inch in size. Place them on the baking sheet, leaving a little space between each one so they don’t spread into each other while baking. This step is so much easier with a scooper, and it keeps all your cookies the same size.

Flatten and Bake

Once all your dough balls are on the tray, gently press each one down with your fingers or the back of a spoon to flatten them just a bit. This helps them bake evenly and gives them that classic cookie shape. Now pop the tray into a preheated oven at 350°F (175°C). Let them bake for 11 to 14 minutes just until the edges look set but the centers are still soft. Don’t worry if they seem a little underdone; they’ll continue to cook slightly as they cool.

Cool and Enjoy

When they come out of the oven, let the cookies cool on the baking sheet for about 5 minutes before moving them. They’ll be very soft at first, but firm up as they sit. After that, transfer them to a wire rack (if you have one) to cool completely or enjoy one warm while the chocolate is still gooey! They’re rich, chewy, and full of chocolatey goodness.

Ingredients

  • Here’s what you need:

  • 1/2 cup brown sugar

  • 1/4 cup cashew butter (or any nut butter you love)

  • 1 egg

  • 2 tablespoons coconut oil (room temperature)

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon baking soda

  • 1 1/4 cups almond flour

  • 1/3 cup cocoa powder (or cacao powder)

  • 1/2 cup white chocolate chips

Directions

  • Mix the Wet Stuff
In a bowl, mix the brown sugar, cashew butter, egg, coconut oil, and vanilla. Stir it all together until it’s smooth and creamy.
  • Sift the Dry Stuff
In a different bowl, sift together the almond flour, cocoa powder, and baking soda. This makes sure there are no lumps!
  • Mix It All Up
Add the dry mix to the wet one. Stir it all together until you have a thick cookie dough.
  • Add the Yummy Bits
Gently fold in the white chocolate chips with a spatula.
  • Scoop the Dough
Use an ice cream scoop or a spoon to make little 1-inch balls. Put them on a baking sheet lined with parchment paper.
  • Flatten and Bake
Press each cookie ball a little with your fingers or a spoon. Then bake at 350°F (175°C) for 11–14 minutes.
  • Cool and Enjoy!
Let the cookies cool for a few minutes before eating. Trust me they taste even better when slightly cooled.

Notes

  • Don’t skip sifting the dry ingredients cocoa powder especially can get clumpy.
  • Make sure your coconut oil is soft (not melted or hard). That helps the dough mix better.
  • Don’t overbake cookies, they will still look soft in the middle when they’re ready. They firm up as they cool!
  • Let them cool before moving them so they can be delicate while warm.

Serving Suggestions

  • Enjoy with a glass of cold milk or almond milk!
  • Crumble one over vanilla ice cream YUM!
  • Pack them in a lunchbox for a sweet surprise.
  • Serve at parties for a gluten-free treat everyone can love.

Fun Fact

Did you know almond flour is made from ground almonds and is full of healthy fats and protein? It also gives these cookies a soft, nutty flavor that’s totally delicious!

Conclusion

These dark chocolate almond flour cookies are one of my go-to easy treats. They’re simple to make, full of rich chocolate flavor, and perfect for any cookie craving. Whether you’re baking for friends, family, or just yourself (hey, no shame!), this recipe is always a hit. Give them a try and let me know how they turn out!
