Cookies and Cream Cookies Sweet, Gooey, and Just Right!

Hey friends!
Today, I’m sharing one of my favorite cookie recipes ever: Cookies and Cream Cookies! These aren’t your typical cookies. They’re soft, chocolatey, and filled with creamy white chocolate chunks that melt in your mouth. If you’re a fan of that classic cookies & cream combo, you’re going to LOVE this twist!

Whether you’re baking after school, on the weekend, or just craving something sweet  this recipe is super easy and super yummy. Let’s dive in!

Method

Mix Wet Ingredients

To start, grab a mixing bowl and combine your brown sugar, cashew butter, egg, coconut oil (make sure it’s soft and at room temperature), and vanilla extract. Use a spoon or spatula to stir everything together until the mixture becomes smooth and creamy. The brown sugar will dissolve slightly into the nut butter and oil, making the base rich and flavorful. This step is important because it helps blend all the wet ingredients evenly, which leads to a better dough texture later.

Sift and Add Dry Ingredients

In a separate bowl, sift together the almond flour, cocoa or cacao powder, and baking soda. Sifting helps remove any clumps and gives your cookies a lighter, more consistent texture. Once everything is sifted, slowly add the dry mixture to the wet bowl a little at a time. Stir gently between each addition until all the dry ingredients are fully incorporated. You should end up with a thick and chocolatey dough that’s easy to scoop but not sticky.

Add the Creamy Goodness

Now comes the fun part  folding in the white chocolate! Add your white chocolate chips or chunks into the dough and gently mix them in. Try to spread them throughout so each cookie has a little creamy bite. These white chocolate pieces are what give your cookies that signature “cream” element and balance out the rich cocoa flavor perfectly.

Shape the Cookies

Using an ice cream scoop or a spoon, scoop out portions of dough that are about 1 inch in size. Roll them gently between your palms if you want them perfectly round, or just drop them directly onto a parchment paper-lined baking sheet. Make sure to leave a bit of space between each cookie so they have room to spread while baking.

Press & Bake

Once your dough balls are on the sheet, gently press each one down to flatten them slightly, not too much, just enough to help them bake evenly. Then, place the baking sheet into a preheated oven at 350°F (175°C). Bake the cookies for about 10 to 12 minutes. They may look slightly soft in the center when you take them out, but that’s exactly what you want! Let them cool on the baking sheet for a few minutes before transferring them to a wire rack. As they cool, they’ll firm up just enough while staying soft and gooey inside.

  • A spatula or spoon
  • Measuring cups & spoons
  • Sifter (for dry ingredients)

Ingredients

  • Here’s what you’ll need to make these delicious bites:

  • 1/2 cup brown sugar

  • 1/4 cup cashew butter (or any nut butter you like!)

  • 1 egg

  • 2 tablespoons coconut oil (room temperature, not melted)

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon baking soda

  • 1 1/4 cups almond flour

  • 1/3 cup cocoa or cacao powder

  • 1/2 cup white chocolate chips or chunks

Directions

  • Mix Wet Ingredients
In one bowl, combine the brown sugar, cashew butter, egg, coconut oil, and vanilla. Stir it up really well until it’s all smooth and creamy.
  • Sift and Add Dry Ingredients
In another bowl, sift together the almond flour, cocoa powder, and baking soda. Slowly add this dry mix into the wet mixture. Mix until you get a thick, yummy dough.
  • Add the Creamy Goodness
Fold in your white chocolate chips or chunks. Don’t skip this part, it’s what makes the “cream” in cookies and cream!
  • Shape the Cookies
Scoop out 1-inch balls of dough using an ice cream scoop or spoon. Place them on a baking sheet lined with parchment paper.
  • Press & Bake
Gently press down on each ball to flatten just a bit. Then bake in a preheated oven at 350°F (175°C) for 10–12 minutes. Let them cool before diving in!

Notes

  • Don’t skip sifting the dry ingredients; it helps the dough stay smooth and lump-free.
  • Make sure your coconut oil is soft, not melted. Too runny, and your cookies might spread too much.
  • Don’t overbake! They might not look totally done when you take them out, but they’ll set perfectly as they cool.

Serving Suggestions

  • Serve warm with a glass of classic cold milk!
  • Stack a few cookies and drizzle melted white chocolate on top for a fancy look.
  • Crumble one over vanilla ice cream for a dreamy dessert.
  • Wrap a couple in wax paper and give them as sweet gifts!

Fun Fact

Did you know? Cookies and cream flavor was originally made famous by ice cream! The combo of chocolate cookies and creamy vanilla has been loved for decades  and now, you can enjoy it in cookie form!

Conclusion

And there you have soft, chewy, chocolatey cookies with creamy white chocolate in every bite! These Cookies and Cream Cookies are simple, fun to make, and perfect for sharing (or keeping all to yourself). I hope you enjoy baking them as much as I do!
