No-Bake Pumpkin Cookie Bars Recipe (Gluten-Free, Naturally Sweetened Fall Dessert)

Who else loves a sweet treat that’s full of fall flavor AND easy to make? These no-bake Pumpkin Cookie Bars recipe are one of my favorite go-to recipes when I want something cozy, chocolatey, and super simple. They’re soft, chewy, and topped with a delicious layer of melty chocolate. Plus they’re gluten-free and naturally sweetened!

Method

Mix the Wet Stuff First

To get started, grab a medium mixing bowl and combine the cashew butter, pumpkin purée, vanilla extract, and honey. This is your wet mixture, and it’s important to stir it until everything is smooth and fully blended. You want the mixture to be creamy and even, with no clumps of cashew butter or streaks of pumpkin. If your cashew butter is on the thicker side, you can warm it slightly in the microwave to help everything mix together more easily.

Add the Dry Stuff

Once your wet ingredients are mixed, it’s time to add the dry ones. Gently stir in the almond flour, pumpkin pie spice, and cinnamon. Mix until a thick, soft dough begins to form. It should come together easily without being too sticky or dry. Once your dough looks uniform and well combined, fold in the chocolate chips. These will add little pockets of sweetness and give the bars their classic cookie feel.

Freeze the Dough

Now, line a loaf tin with parchment paper. This step makes it easy to remove the bars later on, so don’t skip it! Spoon the cookie dough mixture into the lined tin and press it down evenly with the back of your spatula or spoon. Make sure it’s spread out to the edges and has a nice flat top. Place the tin in the freezer for about 15 minutes just enough time for the dough to firm up before adding the chocolate topping.

Make the Chocolate Topping

While the base is chilling, you can make the simple chocolate topping. In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Heat the mixture in 30-second bursts in the microwave, stirring between each interval. Keep going until the chocolate is fully melted and smooth. It should be pourable and glossy, but not overly hot just warm enough to spread easily.

Top It Off

Once the dough has set a bit, remove the loaf tin from the freezer and pour the melted chocolate topping over the cookie dough. Use a spoon or spatula to spread it evenly all across the surface. If you love a little extra flavor and crunch, now’s the perfect time to sprinkle flaky sea salt on top. It adds a fun, gourmet touch and balances the sweetness perfectly.

Freeze Again

Finally, return the tin to the freezer for at least 2 hours. This final freeze is super important it allows the cookie bars to fully set, making them easier to slice and enjoy. Once they’re firm, lift the bars out using the parchment paper, cut them into squares or rectangles (whatever shape you like!), and they’re ready to serve.

Necessary Tools

  • Medium mixing bowl

Ingredients

  • For the Cookie Dough Base:

  • 1 ¼ cups almond flour

  • ⅓ cup pumpkin purée

  • 1 cup cashew butter

  • 2 tsp vanilla extract

  • ⅓ cup honey

  • 1 tsp pumpkin pie spice

  • ½ tsp cinnamon

  • ½ cup chocolate chips

  • For the Chocolate Topping:

  • ½ cup chocolate chips

  • 1 tbsp coconut oil

  • Flaky sea salt (optional but SO good)

Directions

  • Mix the Wet Stuff First!
In your medium bowl, mix together the cashew butter, pumpkin purée, vanilla, and honey. Stir it up until it’s all smooth and creamy.
  • Add the Dry Stuff
Now add in the almond flour, pumpkin pie spice, and cinnamon. Mix it all until it forms a thick cookie dough. Then fold in your chocolate chips.
  • Freeze the Dough
Pour your dough into a lined loaf tin. Press it down evenly. Pop it in the freezer for about 15 minutes so it sets a little.
  • Make the Chocolate Topping
In a small microwave-safe bowl, melt your chocolate chips and coconut oil together. Heat it in 30-second bursts, stirring between each time until it’s silky and smooth.
  • Top It Off
Take your cookie dough out of the freezer and pour the melted chocolate on top. Spread it out and sprinkle with flaky sea salt if you want (you totally should!).
  • Freeze Again
Put the whole thing back into the freezer for at least 2 hours. Once it’s firm, take it out, slice into bars, and enjoy!

Notes

  • Don’t skip freezing time! The bars need to set properly to slice cleanly.
  • Use parchment paper in your loaf tin to make removal super easy.
  • Make sure your chocolate topping isn’t too hot when you pour it just warm and melted.
  • If your cashew butter is thick or stiff, warm it slightly to make mixing easier.

Serving Suggestions

  • These bars are best served chilled right out of the freezer or fridge.
  • Enjoy them with a warm mug of apple cider, pumpkin spice latte, or hot cocoa.
  • They’re great for after-school snacks, cozy fall gatherings, or even breakfast (I won’t tell).

Fun Fact

Did you know pumpkins are actually a fruit? Yup! They have seeds inside, which means they’re in the same group as melons and cucumbers. Pretty cool, huh?

Conclusion

These pumpkin cookie bars recipes are a little slice of fall heaven! They’re super easy, naturally sweet, and full of cozy spices and chocolatey goodness. Whether you’re making them for a family treat or just for yourself, I promise they’ll be a hit.
