Soft M&M Chocolate Chip Cookies (Easy Homemade Recipe)

Who else LOVES soft, chewy cookies with colorful M&Ms and creamy white chocolate chips?  I sure do! These Soft M&M Chocolate Chip Cookies are the perfect treat to make at home. They’re super easy, taste amazing, and look like little party bites of happiness. Whether you’re baking with kids or just want a simple cookie recipe that works every single time this one’s a keeper!

Method

Mix the Good Stuff

Start by grabbing a large mixing bowl. Add the softened coconut oil, brown sugar, and granulated sugar to the bowl. Using an electric mixer or a hand whisk, beat the ingredients together until the mixture looks light and fluffy. This step helps blend the sugars with the oil, creating a smooth and creamy base for your cookies. Be patient this step sets the tone for that perfect soft texture.

Add Flavor & Fluff

Next, crack in the room temperature egg and pour in the vanilla extract. Beat everything together until the egg and vanilla are fully incorporated into the sugar mixture. The batter should now be a little lighter in color and smooth in texture. Using a room-temperature egg is important it mixes better and helps the dough come together evenly.

Dry Team Time

Now it’s time to add your dry ingredients. Slowly mix in the all-purpose flour, baking soda, and baking powder. It’s best to add the dry ingredients gradually, mixing just until you see a thick dough form. The goal here is to create a dough that’s thick but not overworked so mix until just combined. Overmixing can make your cookies tough, and we’re going for soft and chewy!

The Best Part

Once the dough is ready, it’s time to add the fun stuff M&Ms and white chocolate chips. Use a rubber spatula or wooden spoon to gently fold them into the dough. Be sure they’re evenly distributed so every cookie gets a pop of color and sweetness. This is where your dough really starts to look irresistible. If you’re tempted to sneak a bite of dough, I won’t tell!

Chill Out

Transfer the bowl of dough to the fridge and chill for 30 minutes to 1 hour. This is a super important step! Chilling the dough helps it firm up, which means your cookies won’t spread too much while baking. It also gives the flour time to hydrate, which results in a better texture overall. So go take a break your future cookies will thank you!

Shape & Bake

After the dough has chilled, take it out of the fridge and scoop out portions of about 1 inch in size. Roll each portion into a smooth ball with your hands and place them onto a parchment-lined baking sheet, leaving space between each one for spreading. Preheat your oven to 350°F (175°C) and bake the cookies for about 10 to 12 minutes. Keep a close eye on them the edges should turn just lightly golden, but the centers should still look soft and slightly underbaked. That’s what gives them that melt-in-your-mouth middle!

Cool & Enjoy

Once baked, remove the cookies from the oven and let them rest on the baking sheet for about 5 minutes. They’ll continue to cook a little on the hot tray while setting up. After that, transfer them to a cooling rack (or straight to your plate if you just can’t wait). Enjoy them warm, gooey, and straight from the oven or store them in an airtight container to keep them soft for days.

Ingredients

  • Here’s what you’ll need to bake these yummy cookies:

  • 1/2 cup coconut oil, softened (not melted)

  • 1 egg, room temperature

  • 1/2 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 1/2 tablespoon vanilla extract

  • 1 1/2 cups all-purpose flour (can use gluten-free too!)

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 3/4 cup M&Ms

  • 3/4 cup white chocolate chips

Directions

  • Mix the good stuff: In a big bowl, use an electric mixer to cream the soft coconut oil, brown sugar, and granulated sugar together. Mix until it looks fluffy and smooth.
  • Add flavor & fluff: Crack in the egg and pour in the vanilla extract. Mix until everything’s fully combined.
  • Dry team time: Add the flour, baking soda, and baking powder into the bowl. Mix until a thick cookie dough forms.
  • The best part: Gently fold in the white chocolate chips and M&Ms with a spatula. Try not to eat them all before they go in the batter
  • Chill out: Put the bowl in the fridge for 30 minutes to 1 hour. This helps your cookies stay nice and puffy, not flat and spread out.
  • Shape & bake: Once chilled, scoop 1-inch balls of dough. Roll them in your hands and place them on a parchment-lined baking sheet.
  • Bake at 350°F for 10–12 minutes. The edges should look slightly golden, but the centers will stay soft.
  • Cool & enjoy! Let them rest on the tray for a few minutes before moving them to a wire rack or plate. Then dig in!

Notes

  • Don’t skip chilling the dough! It makes the cookies soft and chewy, and stops them from spreading too much.
  • Make sure the egg is room temperature cold eggs can mess with the dough texture.
  • Don’t overmix the dough once you add the flour, or your cookies might turn out dense.
  • Watch the bake time cookies should look a little underdone in the center. They’ll finish cooking on the tray after you take them out.

Serving Suggestions

  • Enjoy warm with a glass of cold milk
  • Turn them into ice cream cookie sandwiches!
  • Add extra M&Ms on top before baking for a bakery-style look
  • Pack in lunchboxes for a fun surprise
  • Great for birthday parties, holidays, or movie nights

Fun Fact

Did you know? M&Ms were first made in 1941 and were originally designed for soldiers because they didn’t melt easily! That’s right, “melts in your mouth, not in your hand” really meant something. Now they make our cookies extra colorful and fun!

Conclusion

These Soft M&M Chocolate Chip Cookies are super easy to make, totally delicious, and always a hit with friends and family. They’re colorful, soft in the center, and bursting with chocolate in every bite. Whether it’s a rainy day activity or a weekend treat, this recipe brings smiles all around. So grab your apron and let’s get baking!
