Snickers Stuffed Dates Recipe (Healthy No-Bake Candy Bar Alternative with Peanut Butter & Chocolate)

If you love a classic Snickers bar but want a healthier twist, these snickers stuffed dates are going to become your new favorite treat. Made with soft Medjool dates, creamy peanut butter, crunchy peanuts, and rich melted chocolate, this no-bake recipe tastes just like a candy bar but is naturally sweetened and made with simple ingredients. These snickers stuffed dates are gooey, chewy, chocolatey, and the perfect quick snack or dessert when you’re craving something indulgent yet wholesome.

Method

Prep the Dates

Start by selecting 10–12 large Medjool dates. These are perfect because they’re super soft and chewy  exactly what we want for our “Snickers” texture. Using a sharp knife, carefully cut a slice lengthwise down the center of each date. Make sure not to cut all the way through  you’re creating a little pocket or “boat” shape that can hold your filling. Remove the pits if they haven’t already been taken out. You should now have open, ready-to-fill dates lined up and waiting.

Fill ’em Up

Next, grab your creamy peanut butter. Using a spoon or a small spatula, scoop about 1 tablespoon of peanut butter and gently press it into the center of each date. Try to spread it out so it fills the space evenly. You can adjust the amount based on the size of your dates  just don’t overstuff to the point where it’s spilling out too much. It’s okay if they look a little messy though, that’s part of the charm!

Sprinkle Some Crunch

Now it’s time for the peanuts! Take your chopped peanuts and sprinkle a pinch or two right on top of the peanut butter. This adds an irresistible crunch and brings in that classic Snickers texture. You can use salted peanuts for a little extra flavor pop, or unsalted if you’re watching sodium. Either way, make sure they stick into the peanut butter so they don’t fall off when you move on to the next step.

Melt the Chocolate

In a microwave-safe bowl, add your dark chocolate chips or chunks along with one tablespoon of coconut oil. The coconut oil helps the chocolate melt more smoothly and makes it easier to drizzle. Microwave the bowl in short 30-second intervals, stirring well after each round. Usually, 1 to 1½ minutes total is enough. Keep an eye on it  you don’t want the chocolate to burn. Once it’s fully melted and glossy, you’re ready to drizzle.

Chocolate Magic Time

Using a spoon, drizzle the warm melted chocolate over the top of each stuffed date. You can go light with it or completely cover them, depending on how chocolatey you want your bites to be. After that, sprinkle a pinch of flaky sea salt on top of the chocolate while it’s still warm  this takes the flavor to the next level and really gives you that sweet-salty balance like a real candy bar.

Freeze and Set

Once all your dates are dressed in chocolate and topped with salt, gently transfer them to a small tray or plate lined with parchment paper (to avoid sticking). Pop the tray into the freezer for about 15 minutes. This helps the chocolate set and gives the dates a firmer bite. When they’re ready, the chocolate will be hardened, and your stuffed dates will be easy to pick up and snack on. You can store them in the fridge or freezer, depending on whether you prefer a soft or chewy texture.

Necessary Tools

  • Sharp knife
  • Spoon or small spatula
  • Microwave-safe bowl
  • Small plate or tray
  • Freezer (for setting the chocolate)

Ingredients

  • 10–12 large Medjool dates, pitted

  • ¾ cup creamy peanut butter

  • ¼ cup chopped peanuts

  • ½ cup dark chocolate chips or chunks

  • 1 tbsp coconut oil

  • Optional: Flaky sea salt for topping

Directions

  • Prep the Dates
Grab your dates and carefully slice each one down the middle, but don’t cut them all the way through! Just enough to open them like a little boat.
  • Fill ’em Up
Spoon about a tablespoon of creamy peanut butter into each date. It’s okay if it gets a little messy more peanut butter, more fun!
  • Sprinkle Some Crunch
Sprinkle the chopped peanuts on top of the peanut butter. This gives that classic Snickers crunch we all love.
  • Melt the Chocolate
In a small bowl, combine the dark chocolate and coconut oil. Pop it in the microwave in 30-second bursts, stirring each time, until it’s all melted and smooth.0.
  • Chocolate Magic Time
Drizzle that warm melted chocolate all over the stuffed dates. Don’t forget a little flaky sea salt on top it makes them taste extra fancy!
  • Freeze and Set
Place the dates on a plate or tray and freeze for about 15 minutes, or until the chocolate is nice and firm. That’s it!

Notes

  • Don’t over-melt the chocolate   microwaving too long can burn it! Stir every 30 seconds.
  • Don’t slice the dates all the way through   they need to stay like little boats to hold the filling.
  • Use a small spoon for the peanut butter so you don’t make a sticky mess.
  • If your dates are too dry, soak them in warm water for 10 minutes to soften them up before using.

Serving Suggestions

  • Enjoy them straight from the fridge or freezer for a chewy bite.
  • Pair with a cold glass of milk or almond milk.
  • Serve at parties as a healthier sweet snack option!
  • Chop them up and use them as a topping on yogurt or smoothie bowls.

Fun Fact

Did you know Medjool dates are actually fresh fruit? They’re picked from the date palm tree and aren’t dried like other dates. That’s why they’re so soft and sweet like caramel from nature!

Conclusion

These snickers stuffed dates are the ultimate healthier alternative to traditional candy bars. With just a few simple ingredients, you get all the flavors of a Snickers bar in a naturally sweet, nutrient-packed bite. Whether you’re meal prepping snacks, serving guests, or just satisfying a sweet craving, snickers stuffed dates are quick to make, fun to eat, and absolutely delicious. Give them a try, you might never go back to regular candy again!
