Method

Make the Dough

Start by getting your food processor or blender ready. Add in the softened dates, nut butter of your choice, vanilla extract, almond flour, and cinnamon powder. Blend or pulse the ingredients together until a thick, sticky dough forms. The mixture should be smooth enough to hold together, but you might still see tiny bits of dates here and there, and that’s totally fine! If your dates weren’t soft enough before blending, the dough might turn out a bit dry, so make sure to soak them in warm water for 10 minutes beforehand. Once your dough is ready, it should look and feel a lot like classic cookie dough only this one is totally safe to eat raw!

Add the Chocolate Chips

Now it’s time to add some crunch and sweetness. Take about half of your chocolate chips roughly 1/2 cup and mix them into the dough. You can either do this by hand using a spatula or spoon, or pulse them in gently with your food processor. Make sure they’re evenly distributed so every bite of your bars has a little chocolatey surprise.

Shape the Bars

Line a loaf tin or small baking dish with parchment paper, making sure the sides are covered, too this helps the bars lift out easily later. Then, scoop the dough into the tin and press it down firmly using a spatula or your fingers. If the dough is sticking too much, lightly wet your hands or the spatula to help smooth it out. Try to make the layer as even and flat as possible so your bars look neat when cut.

Melt and Pour

In a microwave-safe bowl, combine the remaining 1/2 cup of dark chocolate chips with the tablespoon of coconut oil. Microwave the mixture in 30-second intervals, stirring after each one, until the chocolate is completely melted and smooth. Be careful not to overheat it chocolate can burn quickly! Once melted, pour the chocolate over the pressed cookie dough layer in the tin. Use the back of a spoon or spatula to spread it evenly across the surface. If you’re feeling fancy, sprinkle some flaky sea salt on top for a tasty, crunchy finish.

Chill and Slice

Once your bars are fully assembled, place the tin in the freezer for about 1 hour, or until the top chocolate layer has hardened and the bars are firm to the touch. When they’re ready, lift the parchment paper out of the tin and transfer the block to a cutting board. Use a sharp knife to slice into bars or squares whatever shape you like best! Store them in an airtight container in the fridge for the perfect grab-and-go treat.
