Hi, friends! Today I’m super excited to share one of my favorite recipes ever, Strawberry Coconut Banana Bread! Imagine soft, sweet bananas, juicy strawberries, and yummy coconut flakes all baked into one delicious loaf. It’s not only tasty but easy to make and perfect for sharing with your family and friends.
Method
Preparing the Bananas
First, I start by choosing three large ripe bananas. The bananas should have lots of brown spots on their peel, which means they’re nice and sweet! I peel them and place them in a bowl. Using a fork, I mash them until they become smooth with no large lumps remaining. Mashing bananas is fun and also helps make our bread moist and flavorful.
Mixing the Wet Ingredients
Once my bananas are mashed well, I add sugar (¾ cup), melted coconut oil (⅓ cup), two eggs at room temperature, and two teaspoons of vanilla extract into the bowl. I use my hand mixer to blend these ingredients together until everything is fully combined and smooth. The mixture should smell sweet and delicious by now.
Adding the Dry Ingredients
Next, I sift gluten-free flour (1½ cups), baking soda (1 teaspoon), cinnamon (1 teaspoon), and salt (¼ teaspoon) directly into my bowl with the wet ingredients. Sifting helps remove lumps and ensures my bread will be light and fluffy. Using my hand mixer again, I gently blend the dry ingredients into the wet ones until I have a smooth batter. I’m careful not to mix too long because overmixing can make the bread tough.
Folding in Strawberries and Coconut
Now comes the most exciting part, I carefully fold in half a cup of diced fresh strawberries and two-thirds cup of coconut flakes into my batter. Folding means I gently mix the strawberries and coconut flakes into the batter using a spatula. I do this gently so the strawberries stay juicy and the coconut flakes evenly spread throughout.
Baking the Bread
After folding in the strawberries and coconut flakes, I pour the batter into a loaf pan lined with baking paper. I smooth out the top of the batter so it bakes evenly. I preheat my oven to 350°F (175°C) and place my loaf pan inside. The bread bakes for 55-60 minutes. Around the 50-minute mark, I check the bread with a toothpick. If the toothpick comes out clean without sticky batter, I know my delicious Strawberry Coconut Banana Bread is done baking!
Cooling and Serving
When the bread is ready, I carefully remove the loaf pan from the oven using oven mitts. I let it cool in the pan for about 10 minutes, then lift the bread out using the baking paper and let it finish cooling on a rack. Once it’s cool enough, I slice the bread, and it’s ready to enjoy. Warm slices taste especially good with a little butter or ice cream!
