Tortellini Pasta Salad – A Fresh & Flavorful Meal Prep Favorite!

Looking for a quick, delicious, and filling meal prep option? My tortellini pasta salad is a total game-changer! Packed with fresh veggies, flavorful feta cheese, and a homemade sun-dried tomato and Parmesan vinaigrette that is absolutely to die for, this dish is sure to become a staple in your weekly meal rotation. It’s perfect for lunch, dinner, or even as a side dish for gatherings. Let’s get started!

Method

Cook the Tortellini

Start by bringing a large pot of salted water to a rolling boil. Add the tortellini and cook according to the package instructions, usually around 7-10 minutes. Keep an eye on them to ensure they don’t overcook, as you want them to be tender yet firm (al dente). Once the tortellini are cooked, drain them in a colander and rinse under cold water to stop the cooking process. Allow them to cool completely before adding them to the salad, as warm pasta can cause the greens to wilt and the cheese to melt prematurely.

Prepare the Dressing

If you are using dry-packed sun-dried tomatoes, soak them in warm water for about 5 minutes to soften them, making them easier to blend. Once softened, drain and place them in a blender or immersion blender cup along with the juice of half a lemon, all-purpose Greek seasoning, minced garlic, grated Parmesan cheese, and olive oil. Blend until smooth and well combined, ensuring the dressing has a creamy consistency. If needed, add a small amount of water or additional olive oil to adjust the thickness. Set the dressing aside for later.

Chop & Combine the Salad

While the tortellini cools, prepare the vegetables. Dice the cucumber, radishes, and bell pepper into small bite-sized pieces to ensure every bite of the salad is well-balanced. Finely chop the red onion for a slight sharpness that will complement the creamy feta cheese. In a large mixing bowl, combine the chopped vegetables with the cooled tortellini. Add a handful of fresh arugula for a peppery kick, and sprinkle in the chopped dill for a burst of freshness. Finally, crumble in the feta cheese, which will add a salty and tangy contrast to the sweet and crunchy veggies.

Mix & Serve

Once all the ingredients are combined in the mixing bowl, gently toss everything together to evenly distribute the flavors. If you are serving immediately, drizzle the prepared dressing over the salad and mix well to coat everything with the delicious sun-dried tomato and Parmesan vinaigrette. If meal prepping, store the dressing separately and add it just before serving to keep the salad fresh and crisp. Serve chilled and enjoy!

Ingredients

  • For the Pasta Salad

  • 1 package cooked tortellini

  • 1 cucumber, diced

  • 3 radishes, diced

  • 1 bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1 handful arugula

  • 2 tbsp fresh dill, chopped

  • 1/2 cup feta cheese, crumbled

  • For the Dressing

  • 1 or 2 sun-dried tomatoes (rehydrated if needed)

  • Juice from 1/2 a lemon

  • 1 tsp all-purpose Greek seasoning

  • 1 clove garlic, minced

  • 1/4 cup Parmesan cheese, grated

  • 1/2 cup olive oil

Directions

  • Cook the Tortellini: Follow the package instructions to cook the tortellini. Once done, drain and let it cool completely.
  • Prepare the Dressing:
If your sun-dried tomatoes are dry, soak them in warm water for a few minutes.
Blend all dressing ingredients until smooth and creamy. Set aside.
  • Chop & Combine the Salad:
Dice the cucumber, radish, bell pepper, and red onion.
In a large mixing bowl, combine the cooled tortellini with the diced veggies, arugula, dill, and feta cheese.
  • Mix & Serve:
Toss everything together and add the dressing when ready to serve.
If prepping ahead, store the salad without dressing and mix it in when eating.

Notes

  • Don’t overcook the tortellini – it should be tender but firm (al dente) to hold up in the salad.
  • Let the pasta cool before mixing with the veggies to avoid wilting the arugula.
  • Store the dressing separately if meal prepping, so the salad stays fresh longer.
  • Taste before serving – sometimes an extra pinch of salt or lemon juice makes all the difference!

Serving Suggestions

  • Serve this pasta salad as a refreshing lunch on its own or pair it with grilled chicken for extra protein.
  • Add a handful of toasted pine nuts or almonds for extra crunch.
  • Want more zest? Sprinkle extra feta and a squeeze of lemon on top before serving.
  • This salad also makes a great side dish for barbecues and summer picnics!

Fun Fact

Did you know that tortellini originated in the Emilia-Romagna region of Italy? Legend has it that the pasta’s unique shape was inspired by the belly button of Venus, the Roman goddess of love!

Conclusion

This tortellini pasta salad is the ultimate combination of fresh, flavorful, and fuss-free. Whether you’re meal prepping for the week or making a quick dish for a potluck, this recipe is a guaranteed winner. Give it a try, and let me know how it turns out!
