Salted Banana Bread (Blender Recipe) – Easy Salted Caramel Banana Bread with Dates

Banana bread gets a delicious twist with this salted banana bread recipe made entirely in a blender. Naturally sweetened with dates and packed with rich caramel flavor, this salted caramel banana bread is soft, moist, and incredibly easy to prepare. The combination of ripe bananas, warm cinnamon, and a hint of flaky salt creates the perfect balance of sweet and salty. Whether you’re looking for a quick breakfast, a healthy-ish dessert, or a no-fuss baking recipe, this easy salted banana bread is guaranteed to become a favorite.

Method

Soak the Dates

Start by placing your pitted dates in a bowl and covering them with hot water. Let them soak for about 10 minutes. This step is crucial as it softens the dates, making them easier to blend into a smooth paste. While they are soaking, gather and measure out the rest of your ingredients to keep things organized and efficient.

Blend the Base

Once the dates have softened, drain them and add them to your blender or food processor along with the ripe bananas. Blend on high speed until the mixture becomes a thick, smooth paste without any large chunks. This step ensures the natural sweetness of the dates is evenly distributed throughout the batter, creating that rich caramel flavor in every bite.

Set Aside for Icing

Before moving on to the next step, scoop out 2 tablespoons of this banana-date paste and set it aside in a small bowl. This will later be used in the icing to enhance its flavor and creaminess.

Mix Wet & Dry Ingredients

Now, to the remaining banana-date paste in the blender, add the eggs and softened butter. Blend again until fully combined and smooth. At this point, the mixture will be creamy and well incorporated. Next, gradually add the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon. Blend on a low setting or pulse gently just until everything is mixed. Be careful not to over-blend, as doing so can lead to a dense texture rather than a light and fluffy loaf.

Bake to Perfection

Once the batter is ready, pour it into a greased loaf pan, spreading it evenly to ensure uniform baking. Preheat your oven to 350°F (175°C) and bake for about 50 minutes. As the bread bakes, your kitchen will be filled with an irresistible caramel-banana aroma. To check for doneness, insert a toothpick into the center of the loaf  if it comes out clean or with just a few moist crumbs, the bread is done. Remove from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Make the Icing

While the loaf is cooling, prepare the icing. In your food processor or blender, combine the reserved 2 tablespoons of banana-date paste, cream cheese, icing sugar, salt, and water. Blend on high until the mixture becomes smooth and creamy. If the icing seems too thick, add a teaspoon of water at a time and blend again until it reaches a spreadable consistency.

Cool & Ice

Before applying the icing, ensure that the loaf has cooled completely. If the bread is still warm, the icing will melt and become runny. Once cooled, generously spread the icing over the top of the loaf using a spatula or butter knife. For an extra touch, sprinkle a bit of cinnamon and a pinch of flaky salt on top to enhance the salted caramel effect.

Slice & Enjoy

Now comes the best part  slicing and enjoying your homemade Salted Caramel Banana Bread! Cut into thick, delicious slices and serve however you like  on its own, toasted with butter, or even with a scoop of vanilla ice cream for an extra indulgent treat.

Ingredients

  • For the Bread:

  • 1 cup pitted dates (about 8 dates)

  • 2 cups soft banana (about 3 bananas)

  • 2 eggs

  • 1/2 cup soft butter

  • 1.5 cups flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • For the Icing:

  • 2.5 tbsp cream cheese

  • 2 tbsp date paste (from step 1)

  • 2 tbsp water

  • 3 cups icing sugar

  • 2 tsp salt

Directions

  • Soak the Dates: Start by soaking your pitted dates in hot water for about 10 minutes. This softens them and makes blending easier.
  • Blend the Base: Add the soaked dates and bananas to your blender or food processor. Blend on high until smooth and creamy no chunks!
  • Set Aside for Icing: Remove 2 tablespoons of this banana-date paste and set it aside for later. This will be the secret ingredient for our icing.
  • Mix Wet & Dry: Add eggs and butter to the blender and blend again. Now, gradually add all the dry ingredients (flour, baking soda, baking powder, salt, and cinnamon). Blend until just mixed don’t overdo it!
  • Bake to Perfection: Pour the batter into a greased loaf pan and bake at 350°F for 50 minutes. The house will smell amazing!
  • Make the Icing: While the loaf is baking, blend the reserved date paste with cream cheese, icing sugar, salt, and water. Keep blending until super smooth.
  • Cool & Ice: Let the banana bread cool completely before spreading the icing on top. Finish with a dusting of cinnamon and a pinch of flaky salt.
  • Slice & Enjoy!

Notes

  • Don’t skip soaking the dates – This is key to getting that silky smooth blend!
  • Use ripe bananas – The softer the banana, the sweeter the bread.
  • Don’t overmix the batter – Over-blending can make the bread dense instead of soft.
  • Let it cool before icing – If the bread is still warm, the icing will melt and slide right off.
  • Check for doneness – Insert a toothpick in the center; if it comes out clean, your bread is ready!
