Zesty Lime Shortbread Bars with Coconut Whipped Cream (Easy Tropical Dessert Recipe)

If you’re anything like me, you can’t resist a dessert that’s bursting with tropical flavors. These Lime Shortbread Bars are my absolute favorite: a buttery shortbread crust, zesty lime curd, and a heavenly coconut whipped cream topping. It’s the perfect balance of tangy and sweet, with just the right amount of crunch. The best part? This is a small-batch recipe, making just eight bars, so you don’t have to worry about leftovers (but let’s be honest, there won’t be any!).

Method

Making the Shortbread Crust

To begin, preheat your oven to 350°F (175°C). While the oven heats up, take a mixing bowl and combine room-temperature butter, brown sugar, flour, vanilla extract, and salt. Using a fork or your hands, mix everything together until the ingredients form a crumbly yet slightly moist dough. The dough should easily hold its shape when pressed together but still have a delicate texture.

Next, prepare a loaf pan lined with parchment paper. Transfer the shortbread mixture into the pan and press it down evenly to form a compact layer. Pressing firmly ensures that the crust holds together after baking. Place the pan into the preheated oven and bake for 15 minutes, or until the edges start turning a light golden color. This step sets the base for our lime bars and gives them that delightful buttery crunch. While the crust bakes, let’s move on to making the lime curd.

Preparing the Lime Curd

For the curd, start by cubing ½ cup of butter and placing it in a large mixing bowl. This will allow it to soften while you prepare the other ingredients.

In a saucepan over medium heat, combine sugar, salt, lime zest, and eggs, whisking continuously. As the mixture heats up, it will start to combine into a smooth and slightly thickened consistency. At this point, add the freshly squeezed lime juice and continue whisking for about 3-4 minutes. The key to achieving a smooth curd is constant whisking to ensure the eggs don’t scramble. You’ll know it’s ready when the mixture becomes thick enough to coat the back of a spoon.

Once thickened, remove the saucepan from the heat and immediately pour the hot curd over the cubed butter in the mixing bowl. Slowly stir the mixture, allowing the butter to melt completely. This step gives the curd its smooth, velvety texture. Now, take your partially baked shortbread crust out of the oven and carefully pour the lime curd over it, spreading it evenly with a spatula. Place the pan back into the oven and bake for 16-18 minutes, or until the curd is set and no longer wobbly. Once done, remove from the oven and allow the bars to cool completely before adding the whipped cream topping.

Making the Coconut Whipped Cream

To create the perfect fluffy topping, pour one can of coconut whipped cream into a mixing bowl. Using an electric mixer (or a hand whisk if you’re feeling ambitious!), beat the coconut cream for 4-5 minutes until it begins to thicken and holds soft peaks. At this point, add 3 tablespoons of shredded, unsweetened coconut and fold it into the whipped cream. This adds texture and an extra layer of tropical flavor.

Before spreading the whipped cream onto your bars, ensure they have completely cooled. Spreading it on a warm surface will cause it to melt and lose its airy texture. Once the bars are cool, evenly spread the coconut whipped cream over the lime curd layer, smoothing it out gently with a spatula. Finally, sprinkle the remaining shredded coconut and fresh lime zest on top for a beautiful and flavorful finish.

Cutting and Serving

To serve, carefully lift the bars out of the pan using the parchment paper edges. Place them on a cutting board and use a sharp knife to slice them into 8 equal bars. For clean slices, wipe the knife with a damp cloth between cuts. These bars are best served chilled, straight from the refrigerator, for a refreshing and tangy treat.

  • 2/3 cup white sugar

  • 5 limes, zested and squeezed (about 1/2 cup juice and 1 tbsp zest)

  • 1/2 cup butter, cubed

  • 1/2 tsp salt

  • For the Coconut Whipped Cream:

  • 1 can coconut whipped cream (@chasorganics)

  • 4 tbsp shredded, unsweetened coconut (3 tbsp in the whip, 1 tbsp for topping)

  • 1 tbsp lime zest (for garnish)

Directions

  • Making the Shortbread Crust
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine butter, brown sugar, flour, vanilla, and salt. Stir until the mixture is crumbly yet slightly moist.
Transfer the dough into a lined loaf pan and press it firmly into the bottom.
Bake for 15 minutes, until slightly golden. While it’s baking, move on to the lime curd!
  • Preparing the Lime Curd
Cube the butter and place it in a large mixing bowl. Set aside.
In a saucepan over medium heat, whisk together sugar, salt, lime zest, and eggs.
Keep whisking as the mixture thickens slightly, then add the lime juice.
Continue whisking for 3-4 minutes. The mixture should coat the back of a spoon.
Remove from heat and pour the mixture over the cubed butter. Stir slowly until fully melted.
Pour the curd over the baked shortbread crust.
Bake again for 16-18 minutes, until set.
  • Making the Coconut Whipped Cream
In a mixing bowl, whisk coconut whipped cream for 4-5 minutes until thick.
Fold in 3 tbsp shredded coconut.
Let the lime bars cool completely before spreading the whipped cream on top.
Sprinkle with remaining shredded coconut and lime zest.
Slice into 8 bars and enjoy!

Notes

  • Shortbread Dough Consistency: It should be crumbly but hold together when pressed. If it’s too dry, add a tiny bit more butter.
  • Whisking the Curd: Don’t stop whisking while cooking the eggs, or you might end up with scrambled eggs instead of curd!
  • Cooling Time: Make sure the bars cool completely before adding the whipped cream, or it will melt into the curd.
  • Coconut Whip Texture: If it’s too runny, chill the can before whipping to firm it up.

Serving Suggestions

  • Classic Style: Serve chilled straight from the fridge for a refreshing treat.
  • Extra Fancy: Top with a drizzle of honey or a sprinkle of crushed graham crackers.
  • Pairing Perfection: Enjoy these bars with iced tea, cold brew coffee, or a tropical smoothie.

Fun Fact

Did you know that lime zest contains essential oils that give it that extra punch of flavor? The zest actually holds more flavor than the juice itself, which is why it’s a key ingredient in this recipe!

Conclusion

These Lime Shortbread Bars are everything you want in a dessert rich, buttery, citrusy, and creamy, with a hint of tropical coconut. They’re simple to make, absolutely delicious, and perfect for any occasion. Whether you’re enjoying them as a midday pick-me-up or serving them at a get-together, they’ll be a crowd favorite. Give this recipe a try, and let me know what you think!
